Cake, cake cake...I love CAKE!

This thread is torture!!!

My cake favorites include authentic Italian Rum Cake, a good Black Forest Cake, and pound cake with vanilla custard filling and whipped cream frosting.
 
Since I posted to this thread, I keep reminscing about how my now 8 year old used to sing "Happy Birthday" when he was little and at the end would say "Yay, Cake"! He'd get so excited that you got cake after that song was sung!!

I never meant to indicate that you personally would be unethical, but I went to the University of Kansas during two election years and I remember more professors than not urging me to vote Clinton both times!
That is the same place where the student told Rush Limbaugh that he was mad enough at Kerry to vote for Bush- Why you ask? Kerry's train did not stop in Lawrence one night a couple of months ago, where a crowd was waiting. So he sent John Edwards back like two days later and Rush said "that was nice, wasn't it?" "Sloppy seconds" replied the student. College students can be, well, impressionable!
 
The italian cream cake recipe I use doesn't have any rum in it (I agree with you DISshopkeeper, rum is too strong and overpowering in a cake).

So, here's the recipe (just in case anyone is baking soon). It's the best cake ever!!! It gets a few more bowls dirty with the whole separating eggs step (you can see where my priorities lie), but it's absolutely worth it! Even my DH eats this cake, and he's not one for sweets (I know, unthinkable, right?)

Italian Cream Cake:

2 c. sugar
1 stick butter
1/2 c. shortning
5 eggs, separated
1 c. butter milk (can use regular whole milk with a T. of white vinegar, let set and stir)
2 c. sifted flour
1 t. baking soda
1 c. walnuts, chopped
1 small can of flaked coconut

Grease and flour pans, and preheat oven to 350 degrees.

Cream the sugar, butter, and shortning. Beat the egg yolks, then add to the cream mixture. Add flour and soda, mix. Add nuts, milk, and coconut. In a separate bowl, beat egg whites stiff, and then fold into cake mixture.

Bake at 350 degrees for 45 imnutes to 1 hour (check with a toothpick that emerges clean from the center.)

Cream Cheese Frosting:
8 oz. cream cheese
1 box powdered sugar
1 stick butter
1 t. vanilla

Mix until creamy. Frost cake only when cooled.
 

I once made a cake for the kids to have as a treat after school. Well I ended up eating about 1/2 of it myself! I didn't even use a fork either. I just cut a long row of bite-size pieces and everytime I walked by I ate a piece! LOL
I should have just finished it so no one would know, but instead I just cut the whole thing into serving pieces and put them all on a plate. I figured you couldn't really tell how much was gone once it was out of the pan!!
 
My favorite is Rum Cake, I think!!! Ha ha! I guess it depends on my mood which cake is my favorite. I took a cake decorating class a few months ago and the buttercream frosting recipe that the instructor gave us was TO DIE FOR!!!!! I've really been wanting to make another cake, but DH just came in and complained that he's getting fat (he's not :rolleyes: ), so I guess I won't be making any cake soon. :(
 
Sauerkraut Cake
2/3 cups butter
1 1/2 cups sugar
3 eggs, slightly beaten
1 teaspoon vanilla
2 1/4 cups flour
1/2 cup cocoa
1/4 teaspoon salt
1 teaspoon baking powder (squeeze me?)
1 cup water
2/3 cup sauerkraut

Cream butter and sugar. Beat i eggs. Sift dry ingredients and add alternately with water. Rinse, drain, chop and stir in the sauerkraut. Bake in two 8 inch greased and floured pans until center springs back. Bake at 350 about 30 minutes. Frost with whatever you like on a chocolate cake.

Most people this cake has coconut in it.

Coca Cola Cake
2 cups sugar
2 cups flour
1 cup butter
3 tablespoons cocoa
1 cup coca cola
1 teaspoon baking soda
1/2 cup buttermilk
2 eggs, beaten
1 teaspoon vanilla
1 1/2 cups miniature marshmallows (optional)

Sift sugar and flour together. Boil butter, cocoa and coca cola. Pour over flour and sugar. Dissolve soda in buttermilk and pour in the above ingredients. Then add eggs, vanilla and marshmallows. Pour into greased 13 x 9 pan and bake 45 minutes at 350

Icing:
1/2 cup butter
3 tablespoons cocoa
6 tablespoons coca-cola
1 box confectioner's sugar
1 teaspoon vanilla
1 cup broken pecans

Bring to boil the butter, coca and coca-cola. Add the sugar, vanilla and pecans. Pour over cake in the pan while icing is hot.

Heath Bar Cake
1 cup brown sugar
1/2 cup white sugar
1/2 cup butter
2 cups flour
1 egg
1 cup buttermilk
1 teaspoon baking soda
6 Heath bars

Mix first four ingredients like you would mix a pie crust. Take out 1/2 cup and save. Add the egg, buttermilk and baking soda to rest of mixture. Put in a greased and floured 9 x 13 pan. Sprinkle the remaining sugar-flour-butter mixture, combined with broken heath bars over top of batter. Bake at 35 for 30 minutes

I love cake, but the closest I can come to eating a piece is an Atkins type, which isn't nearly as good as the real thing!
No cake for me, I have a protein bar instead.
 
jipsy- I LOVE Coca-cola cake! I pulled this recipe from the internet a few years back when I was having a party. I loved it so much I made it for myself during my qualifying exam weekend (where my professors wrote incredibly hard questions to test my knowledge over the past 3 years of course work and sent me away for the weekend to write 20 pages). Each day I would take a coca-cola cake break to help get me through. It worked- I passed- ah, the miracle of CAKE!!!

Lol, you sound like my little neice. Whenever she sees me she screams, "cake". For some reason she associates my visits with food, lol!:sunny:

I just started atkins a couple of days ago. What was I thinking clicking on this thread? I love lemon cake with cream cheese frosting...and my birthday is this month and I can't have any:(

Good wedding cake is a blessing. Some have the tendency to be dry (and who need that!!!).

For our wedding, we had 5 cakes, all different kinds- one Italian Cream (of course!), one chocolate, one strawberry, one vanilla, and one spice cake. All had cream cheese icing- yum. The cater had to save us a piece of each because it went so quickly!

I love cupcakes too! The best I've found are here in Austin at the Swedish Hill Bakery...if any of you ever come to Austin, I'll personally give you the cake tour!

Speaking of wedding cakes,
when I got married 10 years ago,
I asked a new friend at church who baked cakes
if she'd bake my wedding cake.
She agreed, but unbeknownst
to me this was her very FIRST one!
I couldn't have cared less, to be honest,
because all of her cakes were wonderful,
but this made her a nervous wreck & no one
would tell me! I only found out after I got back
from my honeymoon :p

Our wedding cake has now gone down in history
with every last one of our guests as the
BEST wedding cake they'd ever had!
It was soooooooooo good...

She did such a good job -
made it w/our wedding colors: lavender & white,
and used my mom & dad's wedding topper,
even cleaning & restoring the 'veil' part so it
didn't look ugly on top of the white cake.
It had lots of decoration & pillars, etc..

It really looked professional.
I was glad it all worked out so well,
I think it gave her a real confidence boost.

Ok, now back to the original topic, what was it now?
Oh yeah - Cake, Cake, Cake!!!!!!!!!
