Vapiano is quite common here in Germany. The way it works here is that you get a plastic card with a chip inside when you come in. Then you order food. For pasta and salads you wait while they make your food, for pizza you get a pager and go and get your pizza once it is done. Some drinks you get where you get the food, but there is also a bar with a larger drinks selection. Everytime you order something it is booked onto your card. When you leave, you give them your card and pay what is on it. It definitely is not a classic table service restaurant. But I find it quite comfortable and it is definitely set up so that you can sit for a little while and just get a coffee after your meal and maybe another glass of wine.
Of course they might adopt a different concept in France. Who knows...
I really like Vapiano. The pizza is pretty good and the salads are usually really good, too. I have never tried the pasta. It can be a bit chaotic with lots of people wanting to order and trying to find a place to sit. But my local one is in the middle of the shopping street and even on really busy days they seem to be able to move crowds quickly.
