If I were to go for this promotion, could I buy them and instead of using a third day, using them for an extra person? Example- 3 adults buy 2 promotional tickets for 3 days but under only two days and 3rd person uses extra ”free” ticket?

No. Each ticket can only be used by one person. When you go through the gates, they take your finger scan electronically and it becomes tied with the ticket. If your finger scan doesn't match you are denied entry.
