Disclaimer: I have NOT tried this yet, but I found it online today, and thought anyone else having severe Butterbeer withdrawal, like me, might be interested:

BUTTERBEER

Start to finish: 1 hour (10 minutes active)

Servings: 4

1 cup light or dark brown sugar

2 tablespoons water

6 tablespoon butter

1/2 teaspoon salt

1/2 teaspoon cider vinegar

3/4 cup heavy cream, divided

1/2 teaspoon rum extract

Four 12-ounce bottles cream soda

In a small saucepan over medium, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240 F on a candy thermometer.

Stir in the butter, salt, vinegar and 1/4 heavy cream. Set aside to cool to room temperature.

Once the mixture has cooled, stir in the rum extract.

In a medium bowl, combine 2 tablespoons of the brown sugar mixture and the remaining 1/2 cup of heavy cream. Use an electric mixer to beat until just thickened, but not completely whipped, about 2 to 3 minutes.

To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup for each glass). Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.

Rosmerta's Recipes - Butterbeer
Butterbeer! It warms you up AND tastes great. Now in take-away form from The Three Broomsticks. (Many thanks to Melissa for this recipe!)

Ingredients:

1 cup (8 oz) club soda or cream soda
½ cup (4 oz) butterscotch syrup (ice cream topping)
½ tablespoon butter


Directions:

Step 1: Measure butterscotch and butter into a 2 cup (16 oz) glass. Microwave on high for 1 to 1½ minutes, or until syrup is bubbly and butter is completely incorporated.

Step 2: Stir and cool for 30 seconds, then slowly mix in club soda. Mixture will fizz quite a bit.

Step 3: Serve in two coffee mugs or small glasses; a perfectly warm Hogwarts treat for two!

Homemade Butterbeer Recipe
Brian and myself have been craving that Butterbeer we had while at the Wizarding World, so we've been tweaking a homemade recipe for the past 2 days and finally perfected it. Here ya go.

Regular Homemade Butterbeer Recipe
1 Bottle IBC Cream Soda (tastes exactly like the regular Butterbeer base)

Foam (makes enough for two servings of Butterbeer):
1/3 Cup Heavy Cream
2 Tablespoons Sugar
1 Tablespoon Powdered Sugar
1 Teaspoon Vanilla Extract

Whip to desired consistency.

Pour Cream Soda into Butterbeer Stein or Beer Pilsner.

Layer foam on top with spoon, let rest for 10-20 seconds for the soda to carbonate the foam.

Voila, Butterbeer that tastes like you got it from Hogsmeade.



FROZEN BUTTERBEER RECIPE

* The Foam * (100 % perfected by Ralph and Brian)
1/3 Cup heavy cream
2 tablespoons sugar
1 tablespoon powdered sugar
1 teaspoon vanilla extract
Whip vigorously until thick consistency is achieved

* The Beer *
Shave 3/4ths of a glass of ice into a mug (use a Margaritaville or blender)
Add IBC Cream Soda until almost to the top
Add 1-and-a-half tablespoons of caramel and stir into the icy beer until dissolved

Pour a generous amount of foam on top of the beer, let rest for 10-20 seconds for the soda to carbonate the foam

For an "adult" version, skip the caramel and instead add one shot of Butterscotch schnapps and one shot of Baileys Caramel!
