Busy on weekends? Fri/Mon

We are trying to fit US/IOA into our trip.

We can go sat/sun, or sun/mon or fri/sat.

Common sense is telling me that the weekend (sat/sun) will be crazy busy.
What would be busier, fri/sat or sun/mon?

Which would you suggest.

Will 2 days be enough to see them?

No I'm not much help, but I'm sure someone knows! We originally booked Monday night, to spend Monday and Tuesday at the park. Then realized this wasn't going to work well in our schedule so I booked Sunday night, but never cancelled the Monday night (first through AAA, second through Loews). I'm just wondering how much difference those days would make, especially if staying onsite. We could still do Mon/Tue, but Sun/Mon would work so much better in our schedule as far as break days. Anyone?
