Bus to Polynesian from AKL

I will be staying at AKL-Jambo and have a breakfast reservation at Kona Cafe at 8am. Will the bus be running to get me there on time?

Assuming you know you'll have to take 2 buses..... Depending when you're going, the AK should open 7:00/7:30 for early entry, so buses will be running quite early. I expect you wouldn't have any trouble catching a bus from AKL to AK, then another bus from AK to Poly. I'd probably look to catch a bus by 6:45 or so. In your scenario, though - I think it might be one of the few times I'd seriously consider a ride share. It's not that expensive and would save you a lot of travel and time.

Bus to MK and then monorail to Poly.

Buses will start running about an hour before listed Early Entry (ETPE) time for a specific park, but to be on the first bus it’s recommended to be at the bus stop 90 minutes before ETPE opening time. Since AK usually opens earlier than MK, if you don’t rideshare then I’d be on first bus to AK, and when you get there, ask the transportation CM where to get a bus to Poly.
