buffet questions

ok so just been talking about the buffet option with DF and it made me think about a few things

1. How many times do they do a refresh food if something runs out? based on past weddings df is concerned that food will run out

2. Did you have a theme or did you have lots of different types of foods? a fajita station sounds cool but not really sure about what would go with it or whether it could just be another option for our guests to choose from

3. What determines what can be made for buffets. I have heard that you can pretty much ask for anything thats served on Disney property but wondered whether they can all be adapted for a buffet
 
I can answer the first 2 - my planner said to "be prepared to see a lot of food left over" at the end of the buffet. She said they want it to stay "looking full" throughout the entire time, so they keep refilling as necessary.

I went with a modified version of the Tinkerbell's Brunch Buffet. I took the existing menu, adapted some things I like better than other, and came out with a fantastic menu...they were great to work with.

I'm almost certain they can do almost anything on a buffet - ask your planner, they'll be able to find out for you!
 
My buffet was full at all times!! But remember that the food service is only for a set amount of time, usually an hour and a half so don't expect refills towards the end of the service time. At our buffet the carving station had just finished by the time lunch was over so it wasn't refilled. But everyone went up to the buffet several times and all got their fill.

We used a fajita station for our pre-reception and there was soooooo much food leftover, I wish I could have taken it home! So delicious!
 
They can do just about anything, but they'll let you know if it's not a good buffet food. Certain fish dry out very quickly for example. We chose salmon, cornish game hen (dark meat is less dry), and beef for that reason. When you do the tasting they set up a small buffet so you can see how the presentation will look and how things taste under heat. Although, they even managed the Jiko's flatbreads with regular ovens, when they're supposed to be cooked in a brick oven.
 

1. Like the prior girls said...you will never see it empty until towards the end of the buffet according to my planner

2 & 3. You can pretty much mix and match whatever you want as long as it can be done for a buffet. We recently did a menu tasting and was hoping to add to the Tinkerbell Brunch menu...Canadian Cheese Soup, Baked Ham and Wild berry Grand Marnier Crepes...When the pricing came back it was out of our budget and we ended up just keeping the Crepes (which are delicious)...I think the easiest way to do it is to look at the buffet menus for your time of day and mix and add whatever you like and then price it out.
 
From my planning session, df had similar concerns and the chef reassured us that : if there are certain items that the guests seems to really like, and everyone is eating, these dishes will continuously be refilled. So, if you order a dish and everyone eats it, Disney will refill it. As for choosing dishes, we just thought about our guests and created a menu that would appeal to all. As for what to choose, Disney can make anything. When we met with the chef, he did say that if there are things we would like to offer the guests, and if we didnt see it on their menus, that they could still make it regardless. They have been very accomodating :goodvibes
