Buffet Confusion Question

I have a question about buffets, I am having a buffet for my wedding, but I'm not sure how it works??? For example, it says the chicken comes with mashed potatoes... so does that mean you have to have it with mashed potatoes? Or could you have it with the olive oil grilled veg? Is it more of a mix and match? I really don't get how it works! Does anyone have any pictures of their buffets?
Here is the menu

• Mushroom Filled Pasta with Vegetable Sherry Broth, Leeks, Red Peppers & Gruyere
• Pan Seared Crab Cakes with Lemon Dill Cream

• Caesar Salad with Parmesan & Croutons

• Parmesan Crusted Chicken Beast with Basil Mashed Potatoes & Mushroom Cream
• Mahi Mahi steamed in Banana Leaves with Mango Salsa
• New York Strip Steak with Merlot & Black Pepper Reduction, Balsamic Crimini Mushrooms & Roasted Shallots
• Creamy Parmesan & Goats Cheese Risotto topped with Gremolata
• Olive Oil Grilled Vegetables
• Fingerling Potatoes
• Sourdough Rolls & Rustic Breads
• Coffee, Assortment of Hot Tea’s & Iced Tea’s

Oh, and how does it work with the starters?
 
It has been a while since I was a Disneybride, however, when I was planning my menu it up to me. If the chef had a plan but there was something I didn't want, I just let my planner know and POOF!:wizard: it disappeared from the menu. I imagine if you don't want mashed potatoes on the menu, you can just your planner know and he/she will let the chef know. They can substitute something else for it or take it off completely. Hope that helps!
 
You can mix and match it however you want and they will price it out for you. You can use things from other buffet menus and even the plated menus. Just tell them what you and they will take care of it. Some people like to do a mashed potato martini bar (if we would have had a buffet I would have) and different action stations etc.
 
Thats what I did, picked things from other menu's. I'm just wondering how it is presented, like does the chicken always come with the mash for every person, or can someone say that they'd prefer the fingerling potatoes? My buffet is having all of the above

I'm pretty sure they can choose whatever they want just like on a regular buffet. The only DFTW buffet I went to was brunch though.
 
We just had our menu tasting two weekends ago and we're having several action stations and a warm buffet with chicken, etc. The different stations have accompaniments that guests can choose to have or they can skip. Since it's a buffet, guests can eat whatever they choose. If they don't like the side, they don't have to have it on their plate. I hope that makes sense. :)
