Budget trip ideas

Because of financial issues it looks like we are going to have to cancel our WDW anniversary trip this year. We still want to do a trip of some sort and have been flipping between a short (4 night) carnival cruise and 4 or 5 nights in Vegas. Eigther of these will be less than WDW but will still require us to pay for a flight so I started to wonder if anyone could help me with budget anniversary trip ideas in the midwest. We live in Missouri, quite close to Kansas. We are foodies though so we would like access to good food wherever we go. Anyone have any ideas?
 
Omaha?
Chicago?

Both have excellent zoos, are within driving distance, and LOTS to do. If you choose Omaha I have some great suggestions for dining. If you choose Chicago, I'm sure others here can help out.

If you join your local children's museum, you can get into all of the cool Chicago museums for free. Not just the children's museums.

What about Memphis?
 
Would driving to Disney and staying offsite be in your budget? It looks like you would be going at a pretty inexpensive time of the year.
 

Thanks for the suggestions. Keep them coming, please. We've considered Chicago. I diden't think about Omaha, that's an idea. We've been there but only with the kids and we diden't see much. This would be an adults only trip. Memphis is a great suggestion I haden't thought about. As for driving to Disney. It would still take a fair amount of money to do that as we would have to stop and stay twice maybe three times on the way down. That distance is way to much for us in a car. My husband is a disabled Vet with numerous injurys, chronic pains and illnesses and I have health problems as well. Long car trips are very hard on us. Even if we did Chicago or Memphis we would eigther stop for the night somewhere or take a train so we could at least move around during travel, but it's possible those options could be cheaper than flying to Vegas or a cruise port. 4-5 hours drive is really our max driving distance a day. As for staying offsite I should have clarified. Those other options are cheaper than the way we would do WDW. My husband is adament about staying onsite although not in Dleuxe (just for money reasons) but signature dining at WDW would be a must for him as well (and very important to me too) so I think we'd do better on the DxDP. So no offsite trips for us, but thanks for the suggestion.
 
I second Chicago. So much to see and do. Public transportation is super easy, great food, great nightlife, great shopping, Navy Pier is fun, the museums are exceptional.
 
I've always wanted to go to New Orleans and Savannah...different trips of course!
