I'm looking for some "beefy" meat recipes for a picky carnivore. My DH's dad will be staying with us for a month or two and I'd like to be able to cook some meals that he'd actually eat. We get chicken for free, but he doesn't eat chicken!! So any beef recipes, especially ground beef would be great.

Don't have any beef recipies to share, but how do you get chicken for free?
 
Easy Stroganoff recipe:

Brown 2 lbs hamburger. Drain grease. Mix 1 cup water and 1 pack of lipton onion soup mix then pour over hamburger. Stir in family size can of cream of mushroom soup and simmer for 15 minutes. Add 1 cup sour cream, blend and serve over rice or noodles.
 
try tacos
just cook some ground beef in the pan, drain grease and add one of those taco spice packets

Try sloppy joe
cook some ground beef in the pan, drain grease and add ketchup and worchestire sauce. Serve over sliced of bread or on buns.

I also like to make beef stew. It's not expensive either
boil the beef in about 2 cups of water in the bottom of a stock pot with chopped onions. Then add 1 can of stewed tomatoes, 1 can of crushed, corn, carrots, peas, chopped potatoes, cut green beans. I add Parsley, little salt, pepper and garlic powder. Stir it up and cook for a few hours. Serve over hot rice or noodles. This is just how I make it, but I don't really know if it's the right way or not...
 

Try a few things where you could make it with chicken and beef. Then you'd only have to get enough beef for Dad, not for everyone. Things like tacos (chix. tacos and beef tacos). Quesadilla (our kids like cheese, we like steak or chicen.)Make stir fry. If you bbq, you could bbq chicken for you and steak or pork chop or hamburger for dad. Same thing for the broiler.
Make a few meatless dishes. Like spaghetti or manicotti or pizza or maccaroni and cheese.

I like goulash:
Brown 1/2-1 lb hamburger and half a chopped onion. Boil half box of maccaroni. Drain mac., add hamburger and chopped onion, pour in 1 lg. and one small can of tomato sauce, 1 can diced or stewed tomat. and 1/4 cup of corn. Season with seasoning salt, pepper, and a bit of chili powder. This is great for next day lunches, too. You can even make ahead and freeze if you want.

My DH manages a plant that cuts chicken into breast, tenders, wings, and distributes it to Tyson and such. (they don't kill the chickens) and we get as much as we want. :teeth:
 
My parents made this all the time when I was growing up:

"Glop"

lb of ground beef
large can of baked beans NOT drained (I use Bush's homestyle)
package of noodles (elbow macaroni is best)
cheddar cheese

Brown beef, cook noodles. Combine noodles/beef/beans in baking dish, sprinkle with cheese. Bake at 350 about 30 minutes.

Can easily be doubled.

oooh great ideas everyone! When the weather cools down I am so making beef stew. Of course, I'm in Texas, so that may be - hmm end of October? LOL

almost the exact same thing but you buy london broil on sale and cut it in cubes. put all but the sour cream in oven (3hrs) or crock pot (5 or 6). add sour cream at the end. We always serve with egg noodles and it becomes a pasta dish. you can spread the beef pretty far this way.
 
Hamburger Soup with Garlic Bread

This is my, I'm in a hurry we need to eat, Go To Recipe, it is so convertible as to be unrecognizable from cook to cook Because you use WHAT YOU and Your Family like in it!! However there are 2 things that make or break this dish, ketchup and pepper give this dish its depth of flavor

In a frying pan add very small amount of oil,

add hamburger and break into small pieces[the more people you are serving the smaller you want the pieces] then brown to your taste[I like mine crispy one side and well done],if it has grease in the pan, tip the pan and spoon out the grease

add onion powder, dash of garlic powder, salt sparingly but do salt,
add italian seasonings [ground up really small in your hand, kids hate finding green things in their food, eek!]

While the burger is browning, In a Large Soup pan set on a medium boil,

add 1 can of corn and the juice, 1 can of green beans and the juice, 1 can sliced potatoes drained, add frozen cauliflower [you can add or minus to whatever your family likes!!]

Add 1 tsp beef bullion crystals, cube, or packet, I like the crystals as they tend to be less salty.

add a big squirt of ketchup about 1/4 cup this makes the sauce , stir.
[add ketchup to the grocery list]

Add 1/4 a teaspoon of pepper[the kind in the tin and is finely ground] this gives depth to your soup, If your soup tastes weak or seems to be lacking something add more pepper.

At this point I decide if there is enough liquid to cover the vegi's but not so much that the hamburger can't be added to the pot with simmer room.

[OK! Here is where the debate at our house starts is it soup[more liquid] or stew[dryer]?? Answer: it depends on how much liquid is added at this point. You get to choose you Are the cook.]

In the case I need more liquid, there are choices, Add another can of green beans or corn and the juice, or if I don't have another can of vegi's, I add water, but water will make a thinner soup.

When the hamburger is Browned, Add it to the soup pot, stir.

And let simmer, 5 or 10 minutes.

I like the vegi's tender and the favors to blend. But it is done when everything is hot. Now if it looks too watery add just the noodles from a package of Top Rein [I have tried other noodles, but the whole thing burns miserably]

Serve with crackers or a loaf of garlic bread.

Glad I checked out this thread. These sound good. I'm always looking for something new to try. I'm so uncreative when I cook....thanks for the ideas ya'll

My family loves this one - even picky middle DS!

*Family pack of round steak or whatever boneless cut steaks you find on sale (chuck, etc)
*One onion
*3 small cans mushroom soup
*flour for dredging
*salt and pepper to taste

Dredge the steaks in flour, salt and pepper and pan fry on medium-high in a small amount of oil to brown steaks.

Slice onion

Place steaks and onion slices in a dutch oven, oven cooking bag or slow-cooker. Mix the three cans of soup with only one and a half can of milk. Cook in oven on 325º, 2 hours for cooking bag, 3-4 hours for dutch oven or 4 hours on high in crockpot, 6 hours on low.

The meat will be so tender that you can cut it with a spoon and the gravy is awesome! This is especially yummy served with mashed potatoes or egg noodles.

ETA: It really tastes best done in the dutch oven, but works just fine the other ways, too!

Cheeseburger and fries casserole:Brown hamburger and add a can of cheddar cheese soup and golden mushroom soup (no water) mix and put in the bottom of a 9x13 pan. Top with crinkle cut french fries and bake at 400 for about 20 minutes until fries are golden brown.

Pizza tots casserole: brown hamburger, mix with one can italian tomato soup, 1 can tomato paste and some italian seasoning, top with shredded mozzerella cheese and top with the tater tots. 9x13 pan, bake at 400 until tater tots are brown
 
I have tried .com recipe sites, My favorite one is www.recipezaar.com it has everything!! And all the best of the best!! Especially if you are looking up a recipe that your mother or grandmother forgot to pass on!!
 
Meatballs

1 pound ground beef - Defrost in microwave, then place into a bowl. Add 1 egg, 3/4 cup bread crumbs, and salt &pepper. Form into balls about 2 inches in diameter.. Place in a shallow baking dish and bake for 30 minutes at 350 degrees. In a small dish, combine 3/4 brown sugar and 1/2 cup ketchup with a couple teaspoons of warm water, making a sauce. Pour evenly over the meatballs and bake for an additional 15 minutes. I serve this with mashed potatoes and green beans.
 
I brown my ground beef with chopped onions, garlic powder, salt & pepper.

In another pan, I cook two boxes of Kraft macaroni & cheese. Add the cooked ground beef to the mac & cheese, add one or two cans of Cream of Mushroom Soup. Mix all together, adding a little "Tony Chacherie" seasoning (spicy seasoning from LA) and serve! We all love it! Delicious! :cool1:

I also bake either Jiffy cornbread or blueberry muffins to go with it. Rarely do we have leftovers! :teeth:
