I didn't write down the pumpkin muffin recipe that others were raving about - would somebody please re-post the link to it.

Also, could the brocolli recipes be reposted?

I'm not sure about the specific pumpkin cupcake recipe you wanted, but this is mine - and my kids LOVE this. They even eat the batter. (and they hate pumpin and pumpkin pie). It's soooo easy, especially if you "cheat" and use store-bought cream cheese frosting.

Pumpkin Spice Cupcakes

1 box spice cake mix
1/3 cup water
1/3 cup oil
1 can pumpkin (not pumpkin pie filling)
3 eggs

Mix until well-blended - about 2-3 minutes - then pour into cupcake pans. Bake according to directions of cake mix box. I think it's 18-20 mins at 375.

Allow to cool and frost with cream cheese frosting. Decorate with jimmies/sprinkles if desired.

I also sometimes use a fluted bundt pan and tint the icing orange and make it like a pumpkin. You can stick an ice cream cone in the center hole for the stem. Either use a green cone, or cover the cone with green icing. It looks impressive and it's so easy :)

This year we're going to tint the icing brown and make turkeys out of the cupcakes, using candy corn for the tail feathers and the beaks. DDs saw a picture in a magazine :goodvibes

My cousin makes an awesome broccoli casserole - I'll try to get the recipe and post it tomorrow.

I made a really easy Banana bread last night. I got the recipe from: www.recipezaar.com. But then I modified it a bit. It is so moist. The kids loved it. We have already gobbled up one loaf! :)

Easy Banana Bread

1 box yellow cake mix (I used Duncan Hines extra moist)
1 c. mashed bananas
2 eggs
3 Tbs butter melted
1/2 c. sour cream (my add on)
3/4 c. walnut bits


Mix all of the above together. Bake at 350 for 50-55 min.
So easy! Really moist!

Broccoli Casserole

1 cup mayonnaise
1 can cream of celery soup, undiluted
2 eggs, beaten
2 pkgs (10oz each) frozen chopped broccoli, cooked and drained
2 tablespoons minced onion
1 cup grated sharp Cheddar cheese
1 tablespoon Worcestershire sauce
1 tsp seasoned salt
pepper, to taste
1 cup herb-seasoned stuffing mix
2 tablespoons butter
PREPARATION:

Grease a 2-quart casserole and set aside.
In a large bowl, combine the mayonnaise and soup, mixing well. Stir in the eggs and broccoli. Add the onion, Cheddar cheese, Worcestershire sauce, salt, and pepper.

Place in the prepared casserole dish and top with the stuffing mix. Dot with butter. Bake at 325 degrees for 45 minutes.
Serves 8.
 

I do a 'broccoli bake' every holiday. Took mom's idea, and spun it, lol

2 heads of broccoli
2 cans cream of mushroom soup
1 jar boiled onions
1/2 cup shredded cheddar cheese
1/4 cup bisquick

boil or steam broccoli, then drain. Add all ingredients in baking dish, except bisquick. Top with bisquick, then bake at 350 for 30 minutes.

It's not a holiday without it for my family.

Here's my contribution - I make this southern dish every Thanksgiving, and not any other time of year! But everyone seems to love it. Hope you do!

Corn Pudding

2 cups corn (fresh is best, if you live where you can find it this time of year - frozen or canned is ok)
2 T flour
1 tsp salt
3 T butter
3 whole eggs
2 T sugar
1 1/2 c. milk

Blend butter, sugar, flour and salt. Add eggs, beating well. Stir in corn and milk. Pour ingredients in buttered casserole and bake 45 minutes at 325 degrees. Stir once halfway through cooking. When done, pudding will be golden brown and knife inserted will come out clean.

Here is the recipe for the Pumpkin Cream Cheese muffins that I made. My very picky dh ate them, so I know they are good. :teeth:

INGREDIENTS:
1 (8 ounce) package cream cheese
1 egg
1 teaspoon vanilla extract
3 tablespoons brown sugar

4 1/2 tablespoons all-purpose flour
5 tablespoons white sugar
3/4 teaspoon ground cinnamon
3 tablespoons butter
3 tablespoons chopped pecans

2 1/2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 eggs
1 1/3 cups canned pumpkin
1/3 cup olive oil
2 teaspoons vanilla extract

DIRECTIONS:
1.Preheat oven to 375 degrees F (190 degrees C). Grease and flour 18 muffin cups, or use paper liners.

2.To make the filling: In a medium bowl, beat cream cheese until soft. Add egg, vanilla and brown sugar. Beat until smooth, then set aside.

3.For the streusel topping: In a medium bowl, mix flour, sugar, cinnamon and pecans. Add butter and cut it in with a fork until crumbly. Set aside.

4.For the muffin batter: In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt. Make a well in the center of flour mixture and add eggs, pumpkin, olive oil and vanilla. Beat together until smooth.

5.Place pumpkin mixture in muffin cups about 1/2 full. Then add one tablespoon of the cream cheese mixture right in the middle of the batter. Try to keep cream cheese from touching the paper cup. Sprinkle on the streusel topping.

6.Bake at 375 degrees F (195 degrees C) for 20 to 25 minutes.

My recipe for cooked carrots is so simple.
Boil baby carrots until tender, drain water.
Add in butter, (I never measure, just a couple of tablespoons), stir until melted
Add two-four Tbs. Brown sugar, stirring to melt.

That's it! My kids adore them!

Okay, my parenting advise:

No Thanksgiving would be complete without my Dad's dressing. Luckily, I know how to make it. This makes enough for two store bought stuffing pans worth of dressing. It will feed about 10 people with big appetites or about 15 with small ones. lol

Cornbread stuffing mix in the bag
Herb stuffing mix in the bag
cream of celery soup
cream of mushroom soup
4 raw eggs
3 boiled eggs
2 cans of chicken with broth
3 cans of chicken broth
3 stalks of chopped celery
1 sweet onion chopped
2 green onions chopped
1/2 of a red onion chopped
1 cup of finely chopped mushrooms
1/8 cup chopped parsley
3 cloves of garlic chopped/minced
1 stick of butter
1 tbs of olive oil
1/4 tsp poultry seasoning
1/4 tsp spicy Ms. Dash
1/2 tsp cajun spices
1/4 tsp fresh cracked pepper

Sautee the celery and onions in butter and olive oil mixture onions will be translucent and celery will be softened slightly. Mix in the mushrooms, parsley, and garlic. Continue to cook until the whole mixture is thickened and reduced in size. Everything should feel softened and some of the onions might be turning a little bit brown, but not too brown. Take off the heat and set to the side.

In a LARGE bowl, combine both kinds of dressing mix bags and all the dried spices. Mix well.

In a smaller bowl, combine the two cans of soup. Drain the broth from the cans of chicken into the soup mixture and stir until smooth. Mix chicken and chopped egg white into the soup mixture.

In a even smaller bowl, crumble the boiled egg yolks. Add in the 4 raw eggs and beat well.

Now, add the mixture of sauteed veggies to the dry ingredients in the LARGE bowl. Fold them in well. Add in the ingredients in the soup mixture. Fold in well. Add each can of chicken broth stirring in well. The consistency should be moist, but not soupy. Adjust moisture content as necessary. Now, taste the mixture. Adjust seasonings to taste. Finally, add in the egg mixture, stirring well.

Spray dressing pans with cooking spray. Add in dressing mixture between the two pans. You can safely store this for up to 48 hours covered in the fridge without cooking. I usually let it set up for at least 24 hours before cooking.

Cook pan in preheated 350 degree oven for an hour to an hour and a half. Cooking time depends on how much liquid is in the mixture. A soupier mix will take longer to cook. The top should be browned and the mixture should be moist and delicious.

Here is my easy broccoli casserole dish that everyone seems to love.

Just double, triple, this if necessary.

One large head brocolli (choose the lightest color brocolli that you can find)
One can cream of mushroom soup
3 slices of Kraft Deluxe American Cheese. (or more to taste....)
edited to add 11/15... I like mine more cheesy... 5-6 slices!!!
One cup of cooked rice (Not one cup before cooking)
Fresh bread crumbs... (simply put a few pieces of your wheat/multigrain break in your blender... once slice at a time, tear the slices into smaller pieces so that the blender can handle them better.)

Cut the broccoli into medium sized florets or spears
Start the rice cooking
Start the broccoli cooking
Cook these in separate pots!!
Cook the brocolli only until tender... do not overcook, you don't want 'mush'
Cook the rice until fully cooked and very tender. Drain well.
Heat the Cream of Mushroom Soup and the cheese until thoroughly heated and melted
stir in the cooked rice
Drain the broccoli well, and fold in the brocolli spears very gently
Pour into baking dish
Cover with breadcrumbs

Bake until bubbly and toasy, and enjoy!

Corn Pudding


4 (15 1/4) cans whole kernel corn, drained and divided
1/2 cup all-purpose flour
1/3 cup sugar
6 tablespoons butter or margarine, melted
2 tablespoons cornmeal
1 1/2cups milk
4 large eggs
1/2 teaspoon salt

Process: 1 can corn, flour, and next 6 ingredients in a blender until smooth, stopping to scrape down sides. Transfer to a bowl; stir in remaining 3 cans of corn.

Pour: mixture into a lightly greased 2-quart baking dish

Bake: at 350 for 35 minutes or until set.

Yield: 12 servings

Prep: 10 min Bake 35 min
