Why does Fran have to be out of it for you to get drunk on wine?

Not that kind of putting away silly! She doesn't like me paying the cleaning lady $20 per hour to help me catalog my shipments of wine and put them away for storage in the wine cabinet!

Each winery, and wine has a different aging period. I have some that I'm putting away that won't be opened until 2021. I have others that I need to take out because their target year was 2011. I keep them in a temperature controlled cabinet while they age, and the remove them to a rack in my dining room for picking to drink with steak or ribs, or other hearty foods.

The database I created to track them is quite complex!
 
We did other things too...it took about an hr maybe 90 mins to open the boxes, sort out the aging, and put them in spots in the cabinet. I wrote it all down, I need to type it all in when I get back from the grocery store. Oh yeah and make dinner too!

That's understandable what you do. I have wine in a black box, that is perfect to drink anytime. ;)

For sipping, and daily drinking black box or the equivalent is OK. However, when I make something exceptional or on the holidays, I like something that is better suited to the dish. You wouldn't believe what it is like selecting wine for the holiday or any visit with my parents! :rotfl2:

When I make ribs, I like to pick out a spicy zinfandel to go with it. When I have a nice steak, I prefer a big Cabernet or Syrah. I like having a "wall of wine" that I can go to with a wide variety of flavor options that will compliment my meal. :confused3 Hey, I've got very few pleasures left in life at least I like to enjoy the wine I have with my food!

See the ones I have can't be purchased. Mine are so well aged that I am disappointed even when I go to the best of restaurants, or wine dinners. All the wines they serve are very young. At holidays with my parents and when i do open these wines, they are so well aged and tasty that I am completely spoiled.

This September we had sent a case of wine up to my parents thinking we would come up there, but since Fran got sick they are coming down here. There are a few bottles I requested that they bring back down. The idea was that they would be settled since they went back in September, but I'd rather drink them unsettled than worry than my parents would drink them without us before we got back up there!

Unsuz, it has been quite. I got busy for quite a while and contributed to that.

Wines of a certain vintage are only sold until they are gone, but that doesn't mean that they are ready to drink when they are sold. There are many restaurants that purchase wines and store them, but not many. In my PTR there was an example of where you could have purchased a wine at a restaurant that we went to for $250 but the wine we brought was about 10 years older and I paid about $99 for it and stored it, so that it was much tastier than the version they were selling. They only charged us $20 to open it, so what a deal!
 
Now I'm trying to think of restaraunts near me that save wine for later. The one I can think of was very good, but nothing fancy about it. They had a lot for being a small place in thier basement. But it changed hands and I wonder if the new ownership and management has continued the wine collection. Other than that just a few delux hotels near me do.

This talk is making me thirsty. I know what I will be doing tomorrow evening.
