We fly in super early on a Monday morning staying at POR and thought it would be fun to take the boat to DS. Any breakfast ideas?

Check into it before you make solid plans. Maybe it has changed, but boats to DS didn't start running until somewhere between 10 and 11 not too long ago.

That said...Earl of Sandwich has pretty decent breakfast sandwiches.

Wolfgang Puck Express at Disney Springs Marketplace has a great breakfast menu and its a great place for a relaxing breakfast!
