Kona, The Wave, Grand Floridian Cafe, Whispering Canyon Cafe - these are all good and not buffets. The Wave has a buffet, but there's also an a la carte menu. There's a couple other places, but these are the best ones IMO.
Kona Cafe in the Poly, Whispering Canyon at Wilderness Lodge, The Wave at the Contemporary, Captain's Grille at Yacht Club, Olivia's at Old Key West all come to mind.
Our favorites are Kona (though we haven't been since the menu change) and The Wave. The Wave has both a regular menu and buffet, but we've only done the ladder. We are NOT buffet people at all, but The Wave's is really good. Its much smaller than most places, which means the food is definitely fresher. You could just order off the regular menu, but the buffet has most of the same items and I like to try a little bit of everything.
Not a buffet and not in a park really narrows the field. I like The Wave at the Contemporary. I'd also recommend Captain's Grille at the Yacht Club, though the restaurant is currently housed in a temporary location until the fall. I'd wait until the refurbishment of the regular space is complete before dining there.
Kona Cafe. We went in April before the menu change, but we all loved our breakfasts. The Tonga Toast is yummy, but be prepared because it's a big breakfast! The service was quick & efficient, too.
Breakfast is my favorite Disney meal! All of my spots have already been mentioned: the Wave, Kona, Whispering Canyon, Grand Floridian Café, Olivia's, Captain's Grille (but probably not during the renovation).
