Breakfast in a crockpot?

I found these two recipes on Recipegoldmine and was wondering if anyone else had ever tried anything like this or do you think this will work? I am a little leary about slow cooking eggs for a long period of time. We need to bring something in to work for a brunch type thing and thought this sounded good as I could tote it in my crockpot carrying case and serve something hot. Of course any other suggestions would be welcomed as well. Thanks!

Western Omelet Casserole
32 ounces frozen hash browns
1 pound extra lean ham, cooked and cubed
1 medium onion, diced
1 medium green bell pepper, diced
1 1/2 cup Monterey jack cheese, shredded
12 eggs
1 cup skim milk
1 teaspoon salt
1 teaspoon black pepper or to taste

Place a layer of frozen potatoes on the bottom of the crockpot, followed by a layer of ham then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese. Beat the eggs, milk and salt and pepper together. Pour over the mixture inside the crockpot, cover and turn on LOW. Cook for 10 to 12 hours.

Southwestern Egg and Cheese Breakfast Casserole
18 eggs
2 small cans green chiles, chopped
1 to 1 1/2 pounds cooked breakfast sausage
2 1/2 cups grated Monterey jack cheese
1 onion, diced
1 green bell pepper, diced

Serves 10

Spray crockpot with Pam. Starting with sausage, layer meat, chiles, onions, peppers, and cheese, repeating the layering process until all ingredients are used and ending with a layer of cheese. Beat eggs, then pour over mixture in crockpot. Cover and cook on LOW for 7 to 8 hours.

Serve with sour cream and/or salsa.
 
I've never thought about doing it either. I guess if there's more than one recipe out there someone must think it works. ;) I'm not sure why it wouldn't work. :confused3

Could you do a dry run this weekend to check it out?

If you decide you don't like it, what about making Pumpkin Job? Is it required to be a protein dish? I thought of this, because we often have Strawberry Banana bread from WL, which is a dense, moist breakfast bread and the PJ isn't that far off in a way.
 
I have never thought of cooking breakfast in a crockpot either, but the recipes sound like something my family would enjoy. Let us know if you do make one and what the results are.
 
I think I might give it a try beforehand. I was thinking an egg or protein dish would be good because so many people tend to bring in pastries and doughnuts. I'm a savory breakfast eater and don't like too many sweets in the morning. I'll let you know how they turn out. I was thinking if I make the second recipe, I could also bring in some small tortillas and salsa and have make your own breakfast burritos. Yum!
 

I don't know if eggs would turn out in the crock pot. I think that the eggs and the cheese would seperate and it would not look very good. If I would take this kind of dish, I would put paper towels on top of the crock pot and then put the lid on. The paper towel would absorbe the extra moisture.
 
I've never done it but I know my SIL was talking about doing a crockpot breakfast Christmas morning but we've decided to do it a different day while we're there because the kids have requested a special pancake recipe.

I make sausage gravy (on stove-top) the night before - Store it in the fridge overnight - wake up early next morning and reheat it in the crock pot - Goes over very well!!!
 
I would have never thought to try those in my Crockpot.
 
Just reading this I'm just curious to see if anyone tried this yet?
