I am looking for suggestions. I normally do breakfast in the room and then eat lunch and dinner on the go. In April, I am looking to eat a hardier breakfast late morning in the parks, snacking in the afternoon, and then a sit-down dinner for a break. What are your go-to places for a savory breakfast (think lots of protein) in each of the parks? Thanks for your feedback!
 
I hope others have some great ideas, what I found was most of the in park breakfast were high carb items. We stayed at POFQ and the Swan last time we went, and opted to eat breakfast at the resort and do a lighter lunch. You can look on the Disney app and see what your various options are though.

Snacking, huh? A turkey leg is the go to here if you’re looking to maintain protein.
 

Most of the in-park breakfast options are character meals or buffets which tend to be quite expensive, but, with most of them, you can load up on as much protein as you want. Are you looking particularly for breakfast foods? If not, many a la carte restaurants open at 11 am for lunch.
 
If you wait until 11am to eat, the quick service restaurants will start serving lunch.

Here are my breakfast picks:
MK - sausage, egg, and cheddar bagel at sleepy hollow

Epcot - breakfast sandwich at sunshine seasons or savory sandwich at les halles

DHS - ronto morning wrap at ronto roasters

AK - egg and bacon sandwich at kusafiri

Another thought is to buy boiled eggs/babybel/Greek yogurt from resort grab and go. I'm not a "traditional" breakfast food person and often eat salad in the morning so some raw veggies and a turkey sandwich from the grab and go seems like a pretty filling breakfast to me.
 
Since you have specifics in mind I would just use the app. Filter by the park (1 at a time), filter by qs, ts, etc & browse the menus. Breakfast ones are shorter and fewer than lunch or dinner.

Disney QS in park breakfast options are rather sad fyi especially if you’re not a carb fan… late morning vs 11am lunch isn’t really that much different…
 
Eggs Benedict at Cake Bake. While not inside Epcot, it's walkable from the International Gateway entrance.
 
I agree that is harder to find high protein, lower carb esp. at breakfast. If you are willing to do buffets, we have successfully timed things for 10:30/11ish and have had breakfast and lunch options. YMMV.
Our fav breakfast/brunch is not in a park - Cape May. Omelets to order, carving station, etc.
At QS, I have seen breakfast sandwich options with egg and meat - but I haven't tried them. (I'm GF) Most places seem to do pastries, waffles, etc.
