Hello everyone. I don't usually post on this board, but thought you all might have the answer to my question.

I am looking for a tasty, healthy breakfast that I can have in my office, which is where I usually have my breakfast just after getting in in the mornings.

I usually have one or two of some kind of sweet (chocolatey or peanut buttery) cereal bar, but there are some mornings that I'd like to have something that's not sweet.

Does anyone have any ideas of something non perishable (as the cereal bars are) that I can keep in my office for breakfast?

Thanks!

Well... if it has to be kept at the office all the time, I guess instant oatmeal, instant grits, instant cream of wheat and dried fruit are the ones that come to mind first.

Could you make up your own "to-go" breakfast sandwiches and just grab one from the fridge in the morning and stick it in the microwave at work? I frequently make these when we are taking an early morning car trip with the kids. It saves calories and money. The night before I microwave a beaten egg (or egg white for myself) in a coffee cup that I sprayed with nonstick spray. I put the cooked egg on a 100 calorie english muffin or Arnold Sandwich thin (with or without cheese is good). Wrapped up in wax paper and put in the fridge and easily microwaved the next morning. I suppose you could even freeze them for a more extended life.

Cereal would be excellent if you have access to milk... or you could leave a box of cereal, a cup, and a spoon at work and just bring the milk daily in a small thermos. HTH..................P

have you ever tried meal-replacement bars, such as Zone Perfect bars or balance bars? those probably will be sweet though, but have a greater amount of protein and vitamins.

love the pre-made sammich idea, pjlla!

I always liked snacking on cheerios at the office - just ate them right out of the box (no milk needed). I also used to mix plain oatmeal with coffee - it's an acquired taste :)

This is a toughie...

Keeping in mind that most HEALTHY things are perishable... here are some ideas...

Oatmeal (unflavored, add your own like dried fruit, nuts or honey/agave nectar)

Another option is nuts (almonds, walnuts), dried fruit (organic, without sulfer), and a good healthy cereal (think something with no sugar added, no artificial sugar replacements, and organic if you can get it... like a shredded wheat, or some other whole grain cereal like Kashi) and make a trail mix out of it.

Some good bar options, in my opinion, are Larabars, Organic Z Bars (made by Clif), or Think Green bars.

Do you have the option of bringing something from home? As far as portible that you can bring from home- I like Eziekiel brand bread, that I toast and top with Almond Butter and Organic Jelly, or fruit if it's in season.

I also like to make smoothies, (called green monsters (lovely)... check out my blog www.anniessimplelife.blogspot.com for other recipes I've done or pictures of my healthy food options) made out of a handful of spinach, a kale leaf, 1/4 of a zucchini, 1/3 frozen banana, 1 kiwi, a little bit of water, T of chia seeds, and 1/2 scoop of protein powder. Blend away and drink! I bring mine to work with me all the time.

Fresh fruit is always a good option too- all fruits are portable!

Hope that gives you some good ideas!!!

I actually cook eggs in a coffee mug this way at work in the microwave. It's a good breakfast trick and only takes a minute or so. I like to eat a "scrambled" egg on top of brown rice with soy sauce for breakfast. If you could pre-prep and have access to a microwave, it's an option. Or make your egg sandwich at work. Also, hard-boiled eggs are tasty to eat if you can pre-prep for the week and bring it with you.

As far as things to keep in your desk pantry, I tend to keep the granola bars, applesauce or fruit cups, dried fruit and nuts, fruit cereal bars, fruit leather, granola (to mix into yogurt I bring), juice boxes, vegetable juice (V-8) pudding, hot cereal (oatmeal/grits/malt o meal) and crackers (salty and graham). If you know you're going to eat it for the whole week, you could also leave some sort of bread products (bagels, english muffins, etc...) at your desk for a week without any ill-effects.

Unfortunately, alot of non-perishable breakfasty things are sweet. But at least you can alternate between chocolate/peanut buttery to fruity.
