Breakfast Casserole?

Calling all DIS chefs!

We're having Christmas morning at my house this year for the first time ever and my mother asked if I would make us a breakfast casserole.

Usually I just go grab recipes off the internet for things but this time there is no "test run" so I'm looking for something tried and true that you and your family loves. I'd love for it to have eggs, cheese, starch, and meat. (though this isn't required)

Any suggestions would be greatly appreciated. And I realize there may have been a thread about this in the past but I'm too lazy to go looking for it LOL!:thumbsup2

I made this for the day after Thanksgiving brunch and it was well received. I plan to make it again Christmas morning.

1 pound bulk pork sausage
1 8 oz can refrigerated crescent rolls
1-2 cups shredded mozzerella cheese
4 eggs beaten
3/4 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper

Crumble sausage and cook over medium heat. Drain well. Line bottom of buttered 13x9x2 inch pyrex baking dish with rolls, pressing perforations to seal. Sprinkle with cooked sausage and cheese. (Can be prepared to here and refrigerated overnight.) Combine remaining ingredients, beat well and pour over sausage and cheese. Bake at 425 for 15 minutes or until browned and set. Let stand 5 minuted. Yields 6-8 servings.
 

I recall seeing some kind of french toast casserole floating around here. It sounded delicious. I think it was a Southern Living recipe and could be made ahead and baked Christmas morning. Let me see if I can find the link...
 
Here is another I haven't tried but I trust the source.

6 eggs
1 cup milk
6 oz grated cheddar cheese
1lb sausage or bacon (I always use sausage)
Frozen hash brown patties

Line an 8x8 dish with frozen hash browns.

Sprinkle fried, drained, crumbled sausage or bacon on top.

Mix eggs and milk and pour over meat and potatoes.

Top with cheese.

Refrigerate overnight. Cook at 350 for 45 minutes to 1 hour.


I also have a baked french toast recipe but it didn;t go over as well when I made it.

My breakfast pizza isn't fancy, but it always turns out so wonderful, and tasty.

It's a DiGiorno large pizza crust (butter it, on the top before baking)
8 eggs w/ a smidge of garlic salt - scrambled until kinda runny
Bacon (broken up into little bits) or Sausage (browned and all crumbley) - already cooked
Cheese.

Butter that crust, put the eggs on, put the the meat on, put the cheese on.

Bake as per the crust instructions. (watch the eggs, when they look like they're going to blow up, remove. ;) )

2 c. shredded mild cheddar cheese
9 eggs
¾ tsp. dry mustard
½ c. milk

Put cubed bread in 9x 12 greased pan.
Top with 2 c. shredded mild cheddar cheese (reserve about ¼ cup for top)
2# Sausage (I use 1# regular Jimmy Dean sausage and 1 # hot Jimmy Dean Sausage.)
Brown, drain and put over cheese.
Beat 9 eggs with 2-½ c. milk and ¾ tsp. dry mustard.
Pour over everything – cover and refrigerate overnight.
To bake -
Mix 1 can cream of mushroom soup with ½ c. milk.
Pour overall. Bake 1-½ hours at 350
Sprinkle with reserved cheese for last 15 minutes.

i don't do sausage :scared: have you ever tried it with bacon? i wonder if it would have enough flavor without the sausage???

OMG this one sounds good too. but i have the same problem with the sausage and i'm just not sure about replacing it with bacon??:confused3
 
I think it would be good with bacon. What about trying diced ham?
 
I make this one along with the french toast casserole I have posted before..

Tried, true, and delicous.

Ingredients

1/2 cup butter, divided
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup (4 ounces) shredded process American cheese
1 cup cubed fully cooked ham
1/4 cup sliced green onions
12 eggs, beaten
1 jar (4 ounces) sliced mushrooms, drained
1-1/2 cups soft bread crumbs
Additional sliced green onions, optional

Directions

In a large saucepan, melt 2 tablespoons butter. Whisk in the flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat. Stir in cheese; set aside.

In a large skillet, saute ham and onions in 3 tablespoons butter until onions are tender. Add eggs; cook and stir until eggs are almost set. Stir in mushrooms and cheese sauce. Transfer to a greased 11-in. x 7-in. baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over top. Cover and refrigerate for 2-3 hours or overnight.

Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 25-30 minutes or until top is golden brown. Sprinkle with additional green onions if desired.

(you can skip the mushrooms without any affect to the taste)
 
These all sound good, but not for the elder crowd who has already suffered heart attack & bypass. :scared1:

Do you think you would heat this covered with foil.....or not?

I just made it and will bring to DD's tomorow morning, but I'm just not sure about the heating process.

1 bag of shredded hashbrowns
1 dozen eggs, scrambled with salt and pepper
1 lb. of sausage or bacon cooked (or both yummy)
1 bag of shredder cheddar cheese

line bottom of casserole dish with potatoes, cover with your meat, pour scrambled eggs over and top with cheese. Bake at 350 for about 45 minutes, but just keep an eye on it- my oven cooks fast.

Sounds like what I made for tomorow....so my question is (see post #18)...should this be covered or not when heating in the oven??
