Breadmaker question:

Does anyone know what causes bread to fall before finishing in the bread maker? We bought 3 types of boxed bread. 2 fell and one rose and cooked correctly. It is ticking me off. I made them all the same way. They seem to raise fine and then drop and are as hard as a brick.

Can ya help a gal out? I really want fresh bread that won't bust a tooth!
 
check the dates on the yeast packets. If they aren't incredibly new, it can really screw up the bread.

I had a horrible time with Krusteaz brand bread...and bread packets in general. The best luck I've had is with the recipes from the recipe books Bread Machine Bounty and More Bread Machine Bounty

There are a lot of things that can cause the yeast to not develop properly...too much sugar, too little sugar, too much/little salt...water temperature too high/low. Also, you can have problems if you use too much/little yeast.

I had probs with my breadmaker cuz of the size. It was less than a standard box of bread mix. Until I figured that out my bread always turned out weird. So now I have to measure the pre-packaged stuff. And I've forgotten what the measurement is, so I haven't made bread in awhile. It's in the directions somewhere, but it's hard to find!
 
I also find the package mixes do not cook up right.

I use the recipes from the booklet that came with the machine and get perfect bread.
 

I usually add a bread dough enhancer when I use my bread machine. The one I use is in powdered form and I've been able to find it in the baking section of my grocery store. Hope this helps :)

The packaged mixes must not be too popular, I found 4 kinds at Fry's and 2 types at Safeway.

I will have to look at my book. I was so excited about getting the machine, I wanted to try it out. I never drempt the box mixes wouldn't work right.

It is just odd, the first loaf of raisen bread turned out perfect. The second loaf of white and third loaf of wheat bombed. I did the same with all 3, nothing different. :(

I will have to look at them. They came with the boxes of bread from 2 different stores. I did buy a seperate thing of yeast. I was going to make cinnabons but I forgot my pudding mix which is an important part of the recipe.
It is just odd, it raised beautifully and then fell. No one was in the kitchen, and maybe 10 minutes before we noticed it fell it rose really nice. J's super tall friend didn't touch it when he looked and said it looked great. :confused3
I did try the second loaf on 1.5# vs the 2# on the first loaf. Since the second loaf fell, I reset it back to the 2# setting. I thought maybe that messed it up.

I am thinking it was Krusteaz brand breadmix. I will have to look up bread recipes online today. I am hoping to find some really good, but easy ones :woohoo: So if anyone has some they want to share :yay:

it's weird cause just had that happen ( first time in 8-10yrs i've had the machine)
it used to happen to my daughter all the time though and the manufacturer said humidity can cause it as well. hers fell every time but at the time they lived in a basement level apartment..after they moved it worked fine so he must have been right:rotfl: but that reminds me i'm going to make some sticky buns.ummmm

It was appx 70 degrees and 33-34% humidity last night (yes I checked incase someone asked :rotfl2: )

I am going to try once more today with the yeast I bought at the store and put in the fridge.
