DH has invited his parents for lunch (and tea) on Boxing Day so my usual cold meat and mash won't be suitable. Has anyone got any easy peasy recipes to inspire me? Maybe a chicken recipe that would cook in 5 hours or less in the slow cooker.

Thanks for any inspiration.

we always have a nice meat salad on boxing day , this yr we are having a buffet as we have dd16 boyfriend coming round

Libby, absolutely nothing wrong with cold meat and mash. Could you not do a variation with, say, a nice pasta salad or bubble and squeak :confused3

They'll be here for 2 meals so we'll probably have cold meat and salad for tea. I really want to do something hot for lunch but always seem to give them exactly the same meal each time they visit (we've been married for 24 years so it's getting a bit repetitive! LOL ;))

In that case, how about Hunters Chicken? Chicken wrapped in bacon, in a BBQ sauce topped with cheese. Quite yummy, it's a favourite with my family :)

That sounds really nice, might have to do that one myself:thumbsup2

Not too fancy, but when I was younger we always used to have left over turkey in batter with homemade chips. YUM!

Why do I always turn into a nervous newly wed when cooking for MIL?
