How does it work? We have a trip booked for this December. We would like to go back in February 2011. Can we use the bounceback discount at that time?

It would depend on what the bounceback offer is at the time you go. If the offer covers the dates in February you are looking to go, then yes.
When a bounceback is offered, it is like any other Disney promotion in which it has specific dates attached to it.
