We have a trip planned this August and I am interested in maybe booking a bounce back if the offer is available for the dates we are thinking about. Would it be easier to add a person to the bounce back offer after it has been booked, or to remove a person from the reservation? My mom is not sure if she will be able to get the time off around the time we will want to go back.

There's no difference in difficulty between adding a guest and removing a guest.

The caveat to PP would be that if you are booking a package vs. room only, all adults will be charged the non-refundable travel insurance cost (unless you decline for everyone). I wouldn't add her until you know for sure.
