Bottom Three Re-Imagined

Skipper Canteen's issues have had me thinking about the 3 restaurants that are often sited as the worst on property. Nine Dragons Restaurant, Hollywood and Vine and Tony's Town Square being the ones I feel are the most commonly associated with the bottom of the barrel.

How would you fix/re-imagine/completely change these restaurants to better provide for the park going public?
 
I've never eaten at H&V but I have the other two. The only way to fix Tony's to get some edible food in there. We used to go every year, from before it was even Tony's, then about 10 years ago it started going down hill and even though the location is great, we just don't waste our time. I'd rather have a dry hamburger and I don't eat hamburgers than eat there. As far as Nine Dragons, I don't hate it. Yes, it is American Chinese that you can get at any local restaurant, but let's face it, how many people would eat the real stuff. My family loves to eat new and different things, we've lived in the middle east and travel a lot, the only time I've ever left a restaurant and had to go to McDonald's afterwards was in China Town in San Francisco. Only one out 7 members of my family could eat the food even my Daddy who was known to eat pickled pigs feet on occasion and couldn't eat it.
 
That's the thing. The fix could not be easier, IMO, delicious food! Why is it so difficult for Tony's to produce decent food? I live in a more sparsely populated area of CT-not really near any big cities-and I can get to 20 very good Italian restaurants within 20 minutes. Many years ago, when I worked on the Lower East Side in NYC, you could not swing a cat without hitting 2 dozen amazing Chinese restaurants. And there's the rub, these restaurants have to put out good food or they would be out of business. Apparently, Disney does not care that Tony's food is absolute garbage because if they did they would fix it. They have a captive audience that has to eat somewhere so they are just not interested in putting money into places they will make money regardless of how truly horrible they continue to be.
 
Didn't Pete mention that there have been a few restaurants with notoriously bad food that got fixed over the years. I remember Olivia's, the Pepper Market and Contempo Cafe being mentioned. So it is not like Disney hasn't tried to improve places before. And recent reviews for Artist Point have grown a lot more positive since the chef/menu change.
