<center>Whoopie Pies</center>
CAKE
1 cup butter or margarine
2 cups sugar
2 eggs
4 cups flour
1 cup cocoa
1 tsp. salt
3 tsps. baking soda
2 tlbsp. coffee flavored brandy
2 cups milk
FILLING
8 tlbsp. flour
1 cup milk
1 cup crisco (solid)
1 cup sugar
1/2 tsp. salt
3 tsp. coffee flavored brandy
Making the Whoopie Pies:
Pre-heat oven to 350°
Cream butter and sugar together beating till creamy. Add eggs and beat again. Mix the remaining ingredients mixing well. Drop by teaspons onto ungreased cookie sheets. Bake 7-8 min. Until just cooked, do not over bake. Remove and cool on rack.
Making filling:
In a heavy saucepan cook flour and milk till thick, add coffee brandy, cook a little more. Stirring constantly to avoid lumping or sticking. Cool. Cream shortening, sugar, salt in a mixing bowl, mixing well. When sugar is dissolved add cooled flour mixture. Beat until smooth and creamy.
Taking 2 Whoopies Pies and a tablespoon of filling put them together. Sprinkle with 10X sugar.
