What order to book things in? All our excursions are already booked privately. Don't care for remy....would like Palo brunch and dinner all meet and greets the Jr breakfast and a cabana.....which order should I book?

Here is the order I would do based on what others have said on here...that is of course provided that they are available:
1. Cabana
2. Palo Brunch
3. Palo Dinner
4. Meet and Greets
5. Jr breakfast

I will say that even as a lowly silver, I was able to get Palo brunch on the Fantasy with only 2 sea days without issue. I mean, I was solo so not remotely interested in a cabana, so Palo brunch reservation was my first stop - and it had some times for a while even after the newbie window opened. It may not be your "perfect" time, but I'd venture to guess that unless there is something super special about your cruise's itinerary that caused a ton of Platinum and Golds to book on it, you'll be ok for getting A time.
 
do you have to input/or do anything prior to being able to make your choices? for example do you have to do the port arrival time and input any credit card or other info?

In order for the Port Arrival Time page to open, all previous pages must be filled out. Now, whether you just use the default answers, correct answers or just gibberish, the system can't recognize what it is. It only recognizes that all spaces have been filled in.

The quickest way to the PAT page is to allow default answers to fill in and some sort of short gibberish in the ones you actually have to fill out. Once you've selected your PAT, you can go back at any time and fix any "errors".

There's no required information for booking excursions. That's a different part of the check in process (actually not part of check in, but available at the same time).

Linked rooms must do the check in part individually. But excursions can be booked together (as long as both rooms are at least the same Castaway Club level).

You can check in or excursions first, whichever is more important to you to be sure to do first.

I'll just note, that recently there have been issues with both window actually opening at midnight. Some people are reporting that check in opens at midnight with excursions opening from 30 minutes to 6 hours later.
 
What time zone does the 12am booking window open? Is it 12am Eastern or 3am Eastern?
Midnight eastern. Both the online check in window and the excursion booking window are supposed to open then. But, sometimes, one or the other won't open until 3 am or later (again eastern time).

I'm in one room and DD is in another. In order to do excursions, do I need to check in both rooms sequentially? Or can I go through my room and do bookings then do her room. Would we get the same PAT? Though I guess I'm less concerned about that than I am with getting meet & greets etc.
 
I've seen others comment that if it didn't work on one device (desktop) they tried something else (phone) and were able to book.

When your window(s) open, you will be able to book excursions for anyone in either of your linked rooms, as long as both rooms have the same booking window.

For check-in, each room has to do their own. Now, you can do both rooms, but you have to do them separately. If you do them one right after the other, chances are your PAT will be the same or very close.
