I was told on board in May that there is a 24 hour cancellation policy for tastings.

They definitely do not put all tastings online though, uandmfan! Lots available on board.

I've canceled an hour before a tasting and got my money back.
Could be that it depends on how popular the tasting is. I've been on waiting lists (champagne and mixology) that had over 20 ppl so DCL shouldn't have an issue with cancelations if there are tons of ppl in waiting.

You got lucky.

The problem with last-minute cancellations is those people on the waiting list are not standing outside the venue to see if there were any cancellations. They were likely told they would be notified 24 hours in advance (the cancellation policy) and likely made other plans when they did not hear anything.

I vaguely suspect that they don't actually always enforce the cancellation policy ...

I also heard from servers that the popular tastings are often overbooked. I've been to a couple of those. Where ppl instead of siting at tables, are standing at the bar top. I wouldn't want to be one of them.
So given that some are overbooked, it makes sense that they would be OK with ppl cancelling last minute, to free up some space from the overbooking. Who knows, maybe I did get lucky.

One thing's for sure: tastings have become insanely popular and I'm not sure I like it.
I'm so old I remember years ago tastings being chill, almost intimate events, with only 8-12 people. Those days are gone.

I had a solo wine tasting in February on the Wonder. It was awesome!! (I don’t know if there were cancellations or what - but the sommelier doing it said if I did not want to stay it was fine and in that case there would be no charge, but he was willing to do it for me since I had signed up.)

Holy smokes that is awesome. I'd love to go back to more intimate tastings, or be in a solo one. You get a sommelier all to yourself to explain all things about wine.
