Booking Remy or Palo on-board

Is it difficult to get reservations at these restaurants once on-board? We aren't sure yet if we want to have a date night away from the kids, and if so which night. Just curious if you can get a reservation during the cruise or if it books up ahead of time. Thanks in advance for your help!
 
It could be difficult to get a reservation if you are on a three/four day cruise and the cruise is sold out. Nevertheless on several occasions I have made multiple on-board reservations at both Palo and Remy's but I typically take 7 day cruises. Obviously the best choice is whatever you can get especially if you wait until you are on-board the ship. Good luck.
 
This is good to know. IF I decide to go with the Fantasy for next year's Presidents' Week (still debating), I'm also pondering Remy - but as I'm Gluten-Free and don't eat fish, I want to talk with someone to see what my options would be before committing. I wasn't sure if I should just book it for later in the cruise and cancel if I want after talking with them as I'd have time or if I should just wait to talk with them and then book.

As stated, depending on the ship and the length of cruise it can be easy or difficult. Dinner is usually no too hard to get reservations for, as they hold some reservations back for just this reason. However, if you pick a night and at first they don't have something available they can wait list you. My experience with wait listing isn't very good, what we've done instead is go to the venue when you would like to dine and see if they have availability. We've done this a couple of times.
 

I ended up booking a time for Palo that I didn't like b/c nothing else was available online in advance, but after boarding I went to see if I could change to a better time and got it. This was for a 7-night though. Haven't had to try it on a shorter cruise. As long as you're not too picky it might work out.

I'm not gluten-free so I can't comment on that but I'm allergic to all seafood. We did Remy dinner, brunch, and dessert on our last cruise and I did mention that I was allergic to seafood at dinner so our server recommended the American menu with a couple of modifications (it was lovely - he also recommended a champagne pairing instead of wine pairing because I said I liked bubbles). We did the brunch a couple of days later and it's a fixed menu. I intended to just skip the seafood courses but I found that they'd modified it for me to remove all seafood. So I'm sure there will be no problem modifying the menu for you or at least recommending the options that are gluten and seafood free.
