Booking Package and Room Only...?Help?

I am trying to surprise my family w/ a quick trip to WDW in Nov. I'm tryin to figure out if we should do Free Dining or a Deluxe and pay for Dining.My question is if I book the FD package but also book a room only the night before the package begins can you still pick up your park passes a few days before? If so how does this work? TIA
