I have booked FP many times but we have always stayed onsite. I'm going to have to book FP for 11 of us when our window opens 30 days before. Will there be anything left? I'm worried most of the rides being gone or only being left with minimal times. We aren't going until December 2019 but i'm curious about having to do this, since we will be staying offsite.

There will be MANY things available.
But, you will likely have trouble getting the usual "biggies."

(We know that because the "biggies" can be hard to book at 60 days out.)

We are hoping they will be open. I'm also hoping if they are open that that will make some of the other "biggies" easy to get.
It may also increase crowds overall at all of the parks, so I'm not sure that will make others easier.

I don't think we will know for a while unfortunately ;(

I have a strong suspicion you won’t get the biggies even if Star Wars is open, especially for a group of 11. When Pandora opened, seven dwarfs and FEA were still a tough to get without being 60+. Now that you story fastpasses are available FOP has still been tough. And I think December and possibly November will generally see increased crowds next year through my all of WDW as people try to time their vacations with the opening of Star Wars.

I think you guys will still have a great time, and will still be able to get some good fastpasses, but the headliners will be tough.

I keep checking 30 days out just to get an idea for our August trip, since we're staying off site. The 2 new Toy Story rides and Flight of Passage of course are gone. Seven Dwarfs has late afternoon, early evening available. Everything else has most times available including Frozen and Na'Vi (for 4 people). We're skipping the Studios so we only have to worry about FOP.

After Galaxy's Edge opens, things might change.
But currently, if I book 30 days out, the only thing that I cannot get is FOP and Slinky dogs. Usually not the ultimate best times available for the Alien Soucers and 7DMT, but they tend to be available.

I can only speak to the MK. I'm an offsite visitor who usually looks for fastpasses there 30 days before and travels at relatively busy times. With the exception of 7DMT, you can usually get fastpasses for your next three choices. BUT... It's unusual to be able to get them at let's say 9, 10, and 11, which is often recommended and then try for more (maximizing fastpasses for the whole day). The only ones that are usually available at the very early times are attractions that have such sort lines that you wouldn't even need a fastpass, and I don't get those. Usually though three early afternoon fastpasses for popular rides are available. And after that I've usually been able to pick up another one or two for evening pretty easily. Now that I've heard about the refresh strategy many use maybe I'll try that and perhaps get more than I have in previous trips.

What we've been able to get has usually been pretty decent, giving us only one or two pretty longs lines. -- Not ideal, but not bad enough to get me to stay onsite at Disney -- I just think there are so many wonderful places to stay offsite that are an outstanding value from a quality/cost perspective, making me an offsite girl. Usually too my trips to Orlando are just four nights / three days and usually include SeaWorld, the MK, and one smaller attraction/family visit day (We have family in Orlando and in Tampa).

30 days out usually the rides that are gone (you'll need to constantly refresh to try to grab) are 7dmt, Frozen, both Pandora rides, and the two new TSL rides. However you can't sometimes get these

I just booked Fp's for 6 days out and got Navi River Journey. Then booked for 3 weeks out and had full time range of Toy Story Mania

I know people who split their group. Example: six people get a 9 and 5 get a 9:30 and since its an hour window everyone can get on at 9:30 together, if that makes sense. Or even look into breaking it down into three groups, so 9, 9:15, 9:30.

There should be decent availability for most rides. I wouldn’t count on FOP, SDMT, SDD, or FEA. And maybe not AS2. But the rest should be available.

Peter Pan is the only ride that I would add to this list. We are a party of 5, and availability for PP is hit and miss 30 days out. When it us available, it is normally late evening. Having said that, lack of FP availability has never stopped us from having a fabulous trip! There is plenty of FP availability for rides we do love!
