Hello:

When booking the fantasmic dining package, do I need to do the dinner hour or do some restaurants let you do the lunch time and give you the voucher for getting into the show.

You can do lunch or dinner. The dinner availability is usually early.

The Fantasmic Dining package meal times are mostly during the less busy times at the restaurants (typically somewhere between 1 and 5 PM) so it's usually a late lunch or early dinner.
