Booking Excursion Question

We are traveling to Alaska with a small group. One of the members of our group is recovering from major medical stuff. Right now things are positive and he feels he'll be able to do the excursions we've picked out. My question is what if he needs to cancel going b/c he can't handle it once the cruise finally gets here in Aug? Are they going to be charged for the excursion regardless? Is there a cancellation fee?

Thanks for any help. I could find things about booking but not how to cancel if needed.
