I realize I'm way early for this, but I was wondering if anyone knew when the packages for December are usually released? My family and I are wanting to plan a trip for the first week of December 2021 (resort, dining, park tickets, flights, etc), and I read resorts could be booked early, but for packages you usually have to wait for those. We also haven't flown in YEARS, usually we opt to drive, so I'm not sure how early those can be booked either, but I'm assuming year in advance is a safe guess?

Why not book it ala carte? We never book a package. Get your resort now, book tickets later with a third party like Undercover Tourist for the small discount. You can book flight direct (always smart). Skip the dining plan if you don't want to be shackled to eating how Disney wants (and save money). To your question, packages are usually released in June but who knows under the current circumstances.
 
I personally would not purchase my air through Disney. You have no control over flight times and no option to change things if the airline changes departure or arrival times.
If you are planning on getting the dining plan I would just wait till Disney opens up their reservations (as pp said usually in June).
I have done it both ways, purchasing the whole package through Disney (room,tickets, dining). And also also doing a ticketless package, room and dining plan, and getting my tickets through undercover tourist. Whatever you feel comfortable with.

That is a concern I have booking our flights through Disney. The only times we've flown we booked flight direct, but DH was hoping that going through Disney would keep things easy and simple. Thank you for your feedback!

Thank you! I did look into getting our room first and then playing the rest by ear, but I wasn't sure how difficult it would be to add things to our reservation later as we've only ever booked everything all at once.
