Tomorrowland's Comet Cafe was our go to Quick Service in HK Disneyland. Is it not always open? I guess Explorer's Club is more popular now.

Explorer club food is of better value.
Burgers are least value there, and ought to go for Asian food while in Asia.

Just did the Express Check-in online. heading to HK in 2 days (4 nights in the city before staying in HKDL)

Some obsservations:

I was checking the app on Dec 25. Mystic Manor peaked at 45 minutes. Big Grizzly Mountain and Hyperspace Mountain peaked at 60 minutes. The longest queues were RC Racer and Parachute Drop which peaked at 70 minutes.

I went on Dec 26, none of the rides went above 40 minutes the whole day. I know Tokyo Disneyland is objectively better but during high season like this, I'd rather be in Hong Kong Disneyland.

Today (Dec 27) was a bit more crowded than yesterday but still most rides peaked at 50 minutes
