Book Now, Deal Later?

If we are already booked for January and a great deal comes out tomorrow, can we still get the deal added? Or do we cancel and rebook? What have some of the deals been with room discounts and gift cards. We have a friend who is a cast member that can get us a discount but I wonder if any other deals might be better.
