I had one of the worst WDW dining experiences of my life there, and after talking to many others, discovered that it's pretty normal for Bongos.
We were a party of six eating there during a relatively slow period. The restaurant was not particularly crowded, and yet because of the accoustics in the place, it was almost impossible to hear anyone who wasn't seated right next to you. Our server pushed -- and I mean pushed HARD -- there special drinks in the souvenier glasses despite our repeatedly saying we had no interest. The food ranged from average to almost inedible.
When it came time to pay the bill, it took 45 minutes from the time we first asked our waiter for the bill until the time it finally was brought ot us. At one point, I asked another server if he could help and was told only our server -- who had apparently gone on break AFTER we'd asked for the bill -- could bring it to us.
If there was one bright spot in the evening it was the entertainment. And when I say "entertainment", I don't mean the young woman who was singing. She was okay, but not great. I mean the man we came to dub her "stalker." As sooon as she took to the stage, he jumped up from the bar and went to stand in the shadows. He not only did a pretty phenomenal lip-sync to every song she did, but he had her moves down perfectly. It was clear this guy was a regular, and that the singer was wildly annoyed by him. When she'd walk out into the audience, he'd be about 10 feet to her left or right, still immitating her various moves. It was, I have to say, hysterically funny and at least helped pass the time while we waited for the bill.
