Boneless Thanksgiving Turkey

I have been all over the place deciding the best way to cook the bird this year, but have made a final decision. I am going to spring for two six pound boneless turkey breasts. They are organic, Plainville farm turkey's. I love the idea of no carcass to deal with later!
Has anyone ever cooked one of these, and do have any tips for me? Thanks!

We often cook 3lb. Butterball boneless turkey breasts--my only advise is to cook in a turkey bag. Taste is awesome & clean up is that much easier.
