Boma/smoked tomato soup

Anyone know which nights this is on the rotation? DS has plans to eat till it comes out of his ears!
 
Not sure about the rotation schedule but here is the recipe from Boma:


SMOKED TOMATO BISQUE

Yield: 8 servings

Ingredients:
2 pounds Diced Canned Tomatoes, smoked
1 pound Tomato Puree
2 1/2 cups Chicken Stock
1 quart Heavy Cream
2 T. Granulated Garlic
2 T. Thyme, chopped
3/4 cup Sugar
1/2 cup Hot Sauce (liquid such as Tabasco)
2 pounds Gourmet Tomatoes, smoked
Salt and Pepper

Roux:
4 ounces Butter
4 ounces Flour

Method:
Smoke all the tomatoes for approximately 2 hours.
In a pot, heat the chicken stock, garlic, thyme, sugar, hot sauce, and tomatoes. Puree the soup until smooth (using a hand blender).
Add heavy cream, roux, and simmer. Adjust seasoning if necessary.

I don't know anything about the rotation but I do know that the smoked tomato bisque is always offered on the room service menu at AKL.

So if you can't get down for a meal you can always order one up. It's 4.99 plus the usual service fees.
 
That soup sounds delicious....but just how do you smoke canned tomatoes?
 

I want in on this one too, how to smoke the tomatoes??? I have a smoker, so I suppose you could stick the cans in where the meat normally goes,or put them in a pot and do the same thing-I would guess it would pick up the "smoke" flavor..but as for how long-I couldn't guess-cause your not cooking it-I suppose the longer you leave them in the more smoked they would taste.But I'd really love to hear an answer to this. Just a cute story though, my Dad used to invite people over to "smoke" and couldn't figure out why people gave him funny looks...til we explained.He did love to "smoke". We lost him 4 years ago,and so I keep the tradition going.

We were there on a monday evening in April and the Smoked Tomato Soup was hot in the pot and very good!
 
I wonder if adding a bit of liquid hickory smoke flavor would do?

It seems it would be difficult to smoke canned tomatoes. Unfortunately, the recipe doesn't come with specific directions on this key thing.
