How far of a walk is it between them both? Also how are the boats to epcot and dhs, are they overcrowded and how often do they travel? We have never stayed at either and looking for some info about moving around to both resorts and to parks?

BCV to BWV is about a 5 minute walk, I'd say.

Transportation from the Epcot resorts to Epcot & DHS is great. You can walk to either Epcot or DHS from either resort, or you can take the boats. Boats take longer generally, because they stop at both resorts and the Swan/Dolphin dock then go to Epcot. When staying at BWV, we took the boat back from DHS, but got off at the S/D Dock and just walked over the bridge to BWV. Very quick. The only time we found the boats crowded was on New Year's Eve going from the Boardwalk to Yacht/Beach, after the fireworks.

BWV to DHS walking = 10-12 minutes, add another 5 from BCV.
BCV to Epcot (International Gateway/WS) walking = 5 minutes, add another 5 from BWV.

We drove our own car to AK from BCV, so I can't speak to that. Our BC to MK bus experience was fine, but we went very early in the morning. We did have to wait about 20 minutes in the afternoon for a bus from MK to BC - because we usually drive, I found that frustrating, but I think it's a reasonable amount of time. Our BC bus shared with the Yacht Club in the afternoons - that changes around at different times of the year, and depending on which park you're going to.
 
I guess that the boats arrive every 15-20 minutes. We've used them a lot and they are rarely overcrowded. It's about a 5-10 minute walk (I'm a slow walker) from the Beach Club to the Boardwalk, depending which way and what part of the resorts you are actually going to.

As I said, I'm not a good walker but I find walking to Epcot is easy for me from both. The walk to DHS is too long for me to do regularly, but in November, my DS wanted to give his children some exercise. We were staying at the BCV, and he beat our boat to DHS and we left the same time.

Assuming you have a park-hopper, can you go to the monorail in EPCOT and ride it to MK?

Yep, we did that a couple of times on our last trip staying at BCV. We never took the boat to EPCOT from BCV because we always walked out our villa to the sidewalk that is on the backside of the resort, (sorry I'm not sure if it's the east or west side). It was maybe a 7 minute walk to EPCOT even with 2 kids in a stroller and me carrying the other one in a sling. To take the boat, you have to walk back toward YC, wait for a boat and ride it to IG. It's much quicker to walk it.
We loved staying at BCV with annual passes. Many times we would take a bus or the monorail to EPCOT and then just walk back to our villa.
 
If your in a hurry i wouldn't recommend taking the monorail. The walk through the park, then having to switch monorails can take a while. Waiting for the bus would be much easier.
However we usually do the reverse and take the monorail back from MK. That way we can stroll at our leisure through EPCOT to get back to the BC.

Can you do this if MK is open later than Epcot? What if you don't have a park hopper--is there a path around Epcot?

You can only cut through Epcot if it's open. And no, there's no path if you don't have a park hopper.

We've done breakfast at Norway in EPCOT long before future world opens. We walk from the BC over to Norway and they have CM's making sure you don't go where you shouldn't be.
I know you can walk through in the morning, but I have never tried at closing time.

You'd need to be sure on the park closing times - - I believe Epcot monorail only runs 1 hour after its closing time so if MK is closing later that night or has EMH depending upon what time you leave MK you may not have option to switch to Epcot monorail.
