I agree, the right kennel makes all the difference.
My kennel is run by a vet's office, in fact there are one of the few 24 hour vets in my area, all the other vets (including mine) refer us to them for after-hours emergencies (because when do pets ever get sick when the vet's office is open???).
Anyway, they run an excellent kennel. All kennels have their own private outside area, so the dogs can go in/out at will. For an extra charge, they'll also do "doggie daycare" and take those dogs that pay extra for it and let them all run around in an indoor area carefully supervised. I pay for that when I'm gone for more than a few days. They also run a full grooming service and for a few dollars we can do a quick bath on the morning of her pick up, so she doesn't smell like a kennel, or pay even more and do a full groom (bath, clippers, nail trim, the works). Even when we just do the quick bath she comes home smelling great!
And because it's a 24 hour vet clinic, someone is always there and if there is a medical problem, they can recognize it and treat it right away. And they don't mind at all if I call once or twice during my trip to check on her. And of course they have my contact info and will call me if there's an issue (they've never needed to call so far).
It gets expensive though. For a full week with 3 days of doggie day care and the full groom, it's $300. And I wouldn't say my dog loves it, but I don't think she hates it, either. She doesn't like being dropped off and is major excited to be picked up, but once home she doesn't show any unusual behavior that makes me think she was upset the whole time I was gone, mistreated, ill, etc. My dog has anxiety but not to the degree it sounds like your dog does. All I can recomend is to try a shorter stay of one or two days and see how he/she handles it.
