Blue Zoo - Staying off-site

Hi! We are actually going to Universal this time, but the week we are down in FL is our 15th wedding anniversary (November). My friend said to definitely go to Blue Zoo, and that they have babysitting at the hotel. Do I have to be registered there? Can I just pay for it? I don't mind taking the kids, but would love to have a romantic meal in WDW without them! Any info would be greatly appreciated. We are staying at the Nick Hotel and I'm not sure if they have any kind of kids club...will look into right away. TIA!!
