Congrats, you will have a great family trip!
My son was 6 months old on his first trip, it was the easiest trip with him of them all. He was a very easy going baby and great napper/sleeper so that was lucky. I both nursed and supplemented with formula, I just pre-measured the formula into bottles and then added bottled water and shook it up very well. I never heated bottles, although I know some babies have a preference for warm, that wasn't the case for him so had no need to do so.
I shipped diapers, wipes, formula, bottles, baby wash, dish washing liquid, burp cloths, clothes, blankets, an inflatable tub and inflatable infant pool float ahead of our stay, that is probably a little crazy to do so from New Zealand though.
I used a stroller in the airport which I gate checked and then used a carrier. I also brought a nursing pillow on the plane, extra diapers, change of clothes, etc.. I am guessing you will have a bassinet and/or car seat on your flight for the baby to use?
I also always carried food pouches and snacks just in case.
Each park has a baby care center with nice changing tables, chairs to sit with the infant and feed them, and they also sell just about every item you would need for an infant (although they aren't cheap there but should you need tylenol, more wipes, a pacifier, whatever it may be, you can most likely get it there if needed).
Any ride without a height restriction your infant can go on, there is actually a lot you can all do together.
