Black beans and rice dinner $3

I made black beans and rice for dinner tonight and everyone ate too much! SO YUMMY! The best part is that it cost about $3.00 for a family of five to have a wonderfully warm, heart, tasty, filling meal! :thumbsup2 I have made this three times in the past three weeks. My family is crazy for it. I love cheap meals!!

Care to share the recipe? What seasonings do you use on the beans?
 
I start at dinner time the day before:
soak dry black beans in boiling salted water.Let sit until bedtime. Pour off water, rinse, and cover with fresh boiling salted water. Let sit over night.
In the morning, pour off water, rinse and recover with yet more boiling salted water, but this time put it in the crockpot (coated with olive oil) on high. Add to this: one large onion and 4 cloves garlic and 1/2 red bell pepper diced and cooked slightly in olive oil. add spices to the crock pot when you add the onion... onion powder, garlic powder, salt, pepper, chili powder, celery salt (little bit) ginger (little) . Cook all day on high. Serve with rice and top with a little grated cheddar cheese. YUM! You could add more peppers and such but we are not big fans, so I add only the 1/2 red pepper.
 

That sounds really good, OP. Thanks for the recipe. Here's a super easy black bean thing I do that's yummy, too.

1 medium onion chopped
2 T olive oil
2 cans black beans, drained
1 (thawed) package frozen corn with the red and green peppers in it, or a can of the same, drained.
1/2 to 1 cup salsa

Saute the onion in olive oil until soft. Add the beans, corn, and salsa. Season with salt and pepper. Heat through. Serve with shredded cheese on top. So easy — and good!

Another suggestion is enchiladas. They are fill you up, its cheap, and easy to make.
 
Ugh. I'm allergic to onions. Are there any tasty ways to fix black beans without using onions (or peppers)?
 
That sounds scrumptious, and how can you beat a price like that?
Guacamole would go great with that too. Mmmm....
 
Yum! DH and I made black bean soup Sunday and it was also cheap and delish.
We usually make the Moosewood version of black bean soup:

We also made a cheese and tomato paninni with mustard and each of us ate half of it. The only thing we would change about our menu is we would have added a dollop of sour cream to the soup if we'd thought to buy any. :goodvibes
 
Creamed Tuna On Toast

2 cans tuna $1.50
1 can mushroom soup $.80
1 small can of peas $.50
Bread $1.00/loaf
1/2 can milk $not much

In a small saucepan combine the mushroom soup, 1/2 can of milk, drained tuna and drained small can of peas. Heat through and spoon onto toasted
pieces of bread. Serves 4.

Add two cans of drained black beans and a can of tomatoes and green chilies (Rotel or the like -- I use the cheap ones from Aldi). Serve over rice topped with grated cheese. Add sour cream and salsa, if desired.

Buy store brands, and this actuallly costs LESS than the $3 in the OP. It also tastes and looks much more complex than it is, thanks to the tomatoes and green chilies.

I'm sure if you follow the OP's recipe and leave out onions, it will still be delicious. You can actually make black beans using just black beans and water (well, a little salt is good, too)!!! Then ... add to each bowl shredded cheese, salsa, sour cream, guacamole, and anything else you desire. They are great without cooking them w/ onions!

Sure just leave them out! The garlic adds good flavor, they should still taste nice. I make all kinds of things that call for onions without them, because my son will only eat raw onions (weirdo...) and my daughter won't eat them at all. I've found that most things still taste just fine.

That sounds like a GREAT idea for a quick dinner! We'll have to try that soon!

I'm not sure that you're correct that using the cans is usually cheaper, though. Around here, a bag of dried beans is about 1.00 (I think). It makes a TON of beans (like probably at least 8 servings or even more if you add rice to each bowl). A couple of cans of beans ARE really cheap but don't make as much. I think it sounds like a great time saver, though!
 
I just open a couple cans, drain and rinse. Then I add about 2 T cumin, chopped onion, nuke and stir. Two cups brown rice to 4 cups water, bring to boil then simmer for 25 minutes without disturbing (other than checking for no water left). Slice up a banana or two and add a large dollop of salsa on the side-voila!
 
sound delish! i have been buying lentils more and more lately. i made a really good soup this past tuesday. i post the recipe later on.

Ooooh the cheese sounds good. Can't do the salsa or guac though (those pesky onions hide in every thing!).
