You could order her a cake, have the room decorated/order a package from Disney Florist, do a special dinner, dessert party, or fireworks cruise, take her up in the hot air balloon in Disney Springs or for a ride in the amphibicars (also in DS). You could let her pick a pearl (or two) in Japan in Epcot and have them turn them into jewelry.
