Biggest Loser healthy meal planning thread

I'm back to trying to be healthier all round (both diet and exercise) so I'll try and join in here too :)
Dinner today is roast beef, homemade mash and roast potatoes (ww way) and mixed veg (code for whatever is in the freezer:lmao:).
No dessert for me but the rest of the family can have ice-cream!
 
The family decided on pizza today, so I had a salad instead. Man, that pizza smelled sooooo good!
Tomorrow, DH is making burgers with 93% lean meat and baked beans. I haven't decided on a veggie yet, but probably green beans.
Tuesday-fish (lightly breaded and baked), shrimp, macaroni n cheese (for the kids) and a veggie
Wednesday-grilled chicken tenders, mashed potatoes, and corn on the cob

That's about it for now. I do have Thursday & Friday planned but it's not real healthy! Thursday is sloppy joes (DS10's request) and Friday is stuffed shells.
 
jillbur I know it's too late for last nights dinner now but for future pizza nights there's a really easy recipe on pizzarecipe.org that is so simple to make and it gives some options so that it can be a healthy option(I use skim milk and only the tiniest pinch of salt in the dough) plus lots of veg and half fat cheese for the toppings. Hope this helps :)

Plus it's very inexpensive which is great if you are on a budget (or just saving for that next Disney trip)!!

Thanks for the website. We were actually getting take out & that's what the kids wanted. I usually make pizza with whole wheat pita or flatbreads. Apparently that's not the same as "real" pizza since DS7 says he doesn't like my pizza lol. I'll look at this, though, & maybe it will satisfy DS7!
 

Here's what's up for our menu for the rest of this week. I am without my stove/oven this week, so you can see that these are mostly grill and/or crockpot meals...........

Monday: burgers and grilled green beans and squash (guys had beef burgers, I had MSF burgers).

Tuesday: beef stew in the crockpot. (Tuesday is my work night for WW so I get home late and need something ready to eat when I walk in at 7:30.)

Wednesday: Grilled chicken salad (I have loads of leftover grilled chicken in the freezer from DD's graduation party, so I won't even need to grill. I'll just defrost it in the fridge!) DS will have hard-boiled eggs instead of the chicken.

Thurday: Make-your-own yogurt parfaits. (We usually eat pretty light on Thursday nights, since I weigh-in on Fridays.)

Friday: Homemade pizza (and I got a new crust recipe that was really good... I'll share it later.) If the oven isn't ready to use by then, I will grill the pizza.

Saturday: Broccoli cheddar soup (unless it is really hot out).

Well, that's it for now!...........P
 
Hi Pamela (I remember you from the last time I was contributing to the BL thread). Have you re-joined ww (or been going all along)? Thinking about going again but holding back to see if I do well alone (well with the help and support on here)! Good to see a familiar name :goodvibes

Thanks for the pizza recipe (its quite similar to one I have but seems a little healthier ;)). Going to make this tomorrow for family movie night along with salad for me and garlic bread for everyone else. Easier on both my waistline and wallet! :thumbsup2
 
Ok I've cleaned and tidied the larder fridge and freezer so this weeks menus are taking shape as follows!
Tonight-homemade chilli with basmati rice
Wednesday-chicken cannelloni with side salad
Thursday-"the Hairy Dieters" Chicken Korma with Basmati Rice
Friday-Low fat spaghetti carbonara
Saturday-Baked potato with bacon medallions and low fat cheddar & salad
Sunday-depends on what looks good at farmers market but probably a roast of some sort!

Always feel better when I have a plan so now all I have to do is stick to it! Saturday I'm going out for lunch with my mum and sister as it's 2 years since my dad passed away but I figure I will either have a salad or soup for lunch and then baked spud for dinner. If there aren't any decent options available at lunch I may just make it my main meal of the day and do something light at home for my evening meal.

Anyone else have any plans for this week?

I meant to come on and post my plans Monday, but life got away from me.

Here is my week:

Monday: Steak fajitas (I had some red peppers to use up)

Tuesday: Crockpot pot roast (I don't like to have beef two nights in a row, but I wanted to use up some stuff in the freezer).

Wednesday: DH is gone so it is CARB NIGHT! I have fried rice on the schedule, but DS is requesting curried carrot soup. I'll wait until he gets home and ask again because it seems like it is going to be a REALLY WARM day and soup isn't sounding too appealing.

Thursday: DH gone again so it is baked potato night. I'll make a homemade light cheese sauce and steam some broccoli to top the potatoes... plus there is always salsa, hummus, guacamole, beans, etc. This will be a meat-free night!:thumbsup2 I will probably bake the potatoes in a crockpot and we will be eating early, as I am designated driver (3 kids plus DS) for the first robotics meeting of the season tonight!

Friday: Soup night.... either curried carrot (if I don't make it tonight) or the new stuffed pepper soup recipe I got last week.

Saturday: Homemade pizza. I've got ANOTHER new crust recipe to try! Gotta love Pinterest! :thumbsup2

Sunday: grilled pork and a new recipe to try "Cheesy Cauliflower tater tots." I'll share the recipe if it is any good!

Monday: Burgers onthe grill and "two-ingredient creamy garlic broccoli". Yes, another new Pinterest recipe!

Tuesday: Rosemary roasted whole chicken in the crockpot (since it is a work night for me). Easy one pot meal that includes as many veggies as you want!

I've got SEVERAL chickens in the freezer to use up (got a GREAT deal and probably overbought :lmao: ). DS will end up having baked mozzarella sticks and a small salad, since he can't eat the chicken or the veggies that get cooked in with the chicken.


Wednesday - Saturday: Not planned yet, as I don't have DH's schedule yet.

Love to hear anyone else's plans!..........P
 
I'll post next week - I am getting back to low carb! I have a Dr appt mid Oct and I don't want him to raise his eyebrows if my numbers are up.. my gym at work just opened back up after being closed all summer for renovations so Zumba will be starting soon and I am contemplating joining for the other 3 days (but Hubs and I share a car and work the same hours so we'll see - truthfully i'd like him to join as well but I don't really see that happening)

Pamela I really like the Hairy Dieters cookbook! Its written by 2 motorbike enthusiasts (Dave Myers and Si King)who are also great cooks. They have other cookbooks/tv shows called "Hairy Bikers do..." (insert country at ...) but then they realised they were putting on too much weight/fat so they did a series called Hairy Dieters where they made their favourite meals healthier and added in a bit of exercise and charted their progress along the way :thumbsup2
It's real food for real people if you like. Easy to make and ingredients are accessible and affordable. You can probably find most of them online. They do a great section called "fakeaways" which I love for Fridays as it feels like a treat and replaces high calorie take-out :thumbsup2
 
My menu for the week for just myself (Hubs is eating carbs)

Monday - Stuffed zucchini
Tuedsay - Sauteed cabbage and kielbasa
Wednesday - crockpot pork, mashed caulflower and brussels
Thursday - L/O cabbage and keilbasa
Friday - we'll be my parents
Saturday - Atkins sweet and sour chicken with an extra side of broccoli
