I heard a rumor that the entertainment at Biergarten doesn't start until 1:15pm. Is this true? I wanted an earlier ADR, but I would rather go later than miss all the fun!

Alas, 'tis true. We'll miss them next week with our 12 noon ADR, but since we have a Tutto Italia ADR later that evening we didn't want them too close together. Sad.

Yes it's true, but when we eat at Biergarten, we actually make our lunch ADR early (around noon) so we miss the show. I know, gasp! But after a long hot morning (we've only gone to WDW in the summer), the cool quiet atmosphere is exactly what we're looking for. We just enjoy a nice family conversation over delicious German food and drink.
