Best Vegetarian Dishes

What are some of the yummiest vegetarian dishes at WDW? I'm thinking about becoming a vegetarian and would like to know what some of my options at Disney would be.
 
The seared maize cake with hot pepper sauce at Jiko was so good that my DH called the manager over to thank Jiko for taking vegetarian dining seriously (it was new the week we were there, the week of September 7 ... it was a re-working of the maize-stuffed hot pepper they used to have and it's not listed on AllEars or WDWInfo yet, but it is on the official WDW site). He also really liked the mango-glazed tofu at Sci-Fi. At Mama Melrose I had the tomatoes and mozzarella appetizer (wonderful, good quality and fresh) and the penne a la vodka without the pancetta, and it was definitely the best penne and vodka sauce I'd ever had. They do have other options (DH had the tomato and spinach flatbread and there's an eggplant thing too). We had breakfast at both Boma and Cape May and thought they were both outstanding ... the tomato onion African curry and the not-sweet cinnamon rolls at Boma and the cheese omelet and asparagus at Cape May were the standouts, but everything we had was very good.

For quick service, Wolfgang Puck Express had a couple great sandwich options. Columbia Harbour House has a hummus sandwich and veggie chili. Picnic in the Park at Animal Kingdom had a so-so wrap, but the tandoori tofu side was absolutely wonderful. We ended up eating more veggie burgers than we would have liked (3 in 10 days), but that was lack of planning on our part—if we'd planned better we would have not waited until we were starving and had to eat the nearest available thing. He had a tofu and veggies noodle bowl at Sunshine Seasons in Epcot. I've also heard Morocco is really good but we didn't make it (see above re: not planning well enough).

We do eat seafood so only maybe 1/3 to 1/2 of our meals were actually vegetarian, but those are the vegetarian ones that really stood out. We're also not as detail-oriented as most, so for example he didn't ask what was in the broth in his tofu veggie noodle bowl and I can't swear to you it was truly vegetarian.
 
The vegetarian platter at Tangierine Cafe in Morocco (CS) is incredible. Hummus, bread, tabouleh, lentil salad & marinated olives. I've read there is often couscous on the platter as well.
 
I will try to remember to report back on veggie options after our upcoming trip, but the best vegetarian meal I had on our last trip was at Victoria & Albert's. They created an amazing tasting menu.
 

If you click on the link in my signature you will see some vegetarian dishes. There are also a couple reviews over on the dining thread that are amazing and will show you a ton of both vegan and vegetarian options.

Disney World has some of the most vegetarian-friendly restaurants I've ever been to. They offer to make you a good meal substitute if there isn't something you like on the menu. They'll work with you and won't make you feel like your diet is a hassle as some places have done to me.

I love eating at Disney World! I've been there many times as a vegetarian and love everything.

I have also had that penne vodka dish (without pancetta) at Mama Melrose and it was pretty good - they do have a good selection of veggie options, and it seems like most of their sauces are vegetarian based so that you can order more items without the meat.

Le Chefs de France has a really really delicious vegetable lasagna! I was very very happy with it. The best buffet I've been to was Boma - they had SO many options, including tofu dishes, couscous, and soups. Crystal Palace also had a pretty good selection, which I was pleasantly surprised by.

The best CS meals I've had are also the Lighthouse Sandwich at Columbia Harbour House (soo good!) and a burrito (with no meat) from the Cantina in the Mexico Pavillion. There isn't much listed on their menu, but if you're willing to wait a little bit they are willing to make anything for you without the meat.

First, it's always beneficial to call the restaurant before your trip to note on your ADR that you're vegetarian. If there's nothing (or limited) for vegetarians, the chef will come out to discuss what they can prepare with what they have on hand. Second, CS restaurants often have veggie burgers on hand, even if it is not listed on their menu! It never hurts to ask. :)

I couldn't agree more. That platter is the only dish I've found that's better as of late. We also like the veggie sandwich at DHS Backlot Express and the tofu at Sci-Fi. I don't know where you're staying but we got a delicious pasta dish at the food court at POR. You choose the shape of the pasta, the sauce and two add-ons. Freshly made and delicious.
