Depending on if you are a big eater or not, we found that most food we used a snack credit on served well as a light "meal" to tide us over for a few hours. In MK we got an ice-cream cookie sandwich that was HUGE, in AK we got two egg rolls from Yak & Yeti, in EPCOT we got the croissant in France and in DHS we got breakfast pasties/cupcakes at Starring Rolls. Some great dessert items on the snack credit were a Dole Whip, a sundae at Seashore Sweets and POP (they were probably 3-scoop with whipped cream, hot fudge and a cherry), the strawberry shortcake at Sunshine Seasons...too many to name and all delish!
Sadly, some of those are no longer available as a SC. No more Ice Cream Cookie Sandwiches and only 1 Egg Roll in AK. They still offer the 2 pork egg rolls but not as a SC, just the one. I'm hoping the 3 scoop sundae is still at POP since it appears to be disappearing from some of the parks.
I have taken the list on jjohnson's thread and modified it with info from other posts and a blog (easywdw.com). There have been quite a few changes/deletions/additions.
I do agree that you can use a SC for a light meal. We like to get 3 beignets at POFQ with a SC. We get 2 orders for the 3 of us and usually a side of a fruit bowl.
