Update: I'm here now and wrapped up my park experiences at AK and Epcot. I went to Epcot because of all the open spaces and outdoor food options. Most of the festival food was a bit of disappointment though, but pork tostadas are really good -- I wish I had gotten two and maybe a side of guacamole from the Mexico restaurant (or in general maybe also made a reservation at eat at restaurant in Epcot vs the snacking). It was a bit quiet... I was OK with that and rarely felt concerned about people getting to close to me.
I did AK this morning and you really only need four hours in the park to knock everything out (while it is summer, I recommend the morning since lots of thunderstorms in the afternoon). The cast members at AK were really friendly and waved, etc. Epcot didn't have that, largely because World Showcase is just the food stands and shops. The boats with musicians and characters were a nice touch, however just not a lot of food options, especially basically no breakfast, so eat something before you go or bring food. The fruit stand in Africa was selling one egg/sausage breakfast sandwich. That's the only thing I saw.
The experiences in both parks not quite the same as before the pandemic. Not being able to park hop is a bit of a bummer. Epcot does have a lot of different niches and places to hang out and sit and eat. You can't eat or drink while walking, so I felt like the time in Epcot was a bit slowed down for the at reason... Instead of walking with a drink, I had to be stationary. I supposed you can could have some sips, then walk to another area, then find another spot to drink. Just the mask adds extra steps. I think Epcot will also be better when it cools off some.
I was here in Feb and early March 2020 and at HS both times, so didn't feel compelled to go this time, but I think I would have liked that option otherwise.
