best one day touring plan

So I was thinking about skipping Studios Park and just visiting DLPark but I'm wondering if its a waste to skip some of the cool stuff at at the Studios. We only have one day so I don't want to spend my time standing in lines. Does anyone have a good plan for visiting both parks in one day? I want to make the most of our time and be smart about which park to visit and which rides to get on. We'll be there on October 12th, a Monday, and its not a busy day at the parks.
 
We're going to be there the exact same day! I put a similar post on here a few months ago and got some good responses. We're going to do both parks that day, starting at the Studios then DL. Here's what someone suggested:

Studios- Crush, Get FP for Ratatouille, RC Racer, Ride Rat, (we also want to do Cars, RNRC, ToT, Cinemagique, and Slinky Dog)
DL- Space Mtn, Indiana Jones, Castle (dragon underneath), Phantom Manor, Pirates, (we also want to do Star Tours, Buzz Lightyear, Teacups, Peter Pan, Autopia, Pinocchio, and Snow White)

Not sure we'll fit all that in, but that's our plan. We're hitting DLP the day after we arrive on an overnight flight, so I'm not sure we'll make it to closing. The kids (11 and 13) and DH probably will, it will be me who will struggle.

I'd love to hear suggestions if anyone has them. Also trying to figure out where to eat. We don't want to take time for a table service meal, but the quick service places look like mostly American food we can get at home. I'm thinking croquet monsieurs at either Blockbuster Café or Market House Deli, or maybe fish and chips at Toad Hall.
