Our last two cruises we've done it on the last night and we are not a fan at all. With packing up and all that goes along with that we really don't care for it on the last night. It just so happens the last two cruises we've been on we've had a special occasion (30th birthday & wedding anniversary) and both times they fell on the last night! I'm not big on Palo dinner though, but I'm all about the brunch. Also, one of my favorite entrees is on Pirate night- the seafood pasta. So to each his/her own. Just make sure you don't miss out on brunch!
